Cider Glazed Salmon

 Salmon is definitely one of those dishes that you either love or hate but for those wanting to come over to the right side *winks*, you might want to try this recipe.
There are lots of cider glazed recipes out there but I wanted something quick and simple that would also appeal to kids.  If you can get your kids eating fish at a young age, the health benefits are tremendous.  I don’t buy farmed salmon and unless you can purchase fresh locally, I would recommend frozen.  It’s flash frozen on the boat as soon as it’s caught so it’s fresher than anything you’ll find at your grocer’s these days.
As an aside, you may have noticed I’ve changed the look of my blog again.  I’m having a blast with my new camera and wanted to post some of my pics on the header.  I’d love to hear your opinion. Over the next few weeks, I’ll be trying out different looks and I will need some help with a final decision. Cider Glazed Salmon - simply fresh dinners
Cider Glazed Salmon

Serves: 4-6
Ingredients
  • 2 pounds salmon fillets
  • 3 cups apple cider
  • 1/2 cup chopped organic pecans
  • 1/2 cup raw honey
  • 1 cup grainy mustard
  • 1 tablespoon minced garlic
  • 1 tablespoon grated horseradish
  • 1/2 cup chopped dill
  • pinch salt
  • pinch raw brown sugar
Instructions
  1. In sauce pan, reduce apple cider to 1 cup, add honey and cool. Once cooled, fold in mustard, chopped dill, chopped pecans, garlic, horseradish and a pinch of salt. Season both sides of salmon with a pinch of sugar and salt and let stand for 3-5 minutes.
  2. Start outdoor grill 15-30 minutes prior. . Glaze with cider reduction and place salmon on grill away from direct heat and grill for approximately 10 – 12 minutes.
  3. This can be done in the oven as well. Use parchment paper on a baking sheet, spreading the salmon fillets at least 2 inches apart. Bake at 400 F for 12-14 minutes or until done.
  4. Let salmon rest before serving. Serve with a garden salad. I added some lemon thyme for presentation as well.
