Healthy Weeknight Meal Plan (#13)

I’m loving the menu I’ve put together this week because every night there is a substantial but healthy meal.  No one is going hungry this week or complaining that there’s too many …gasp….salads! ha!  These beautiful dishes have amazing flavor and fresh ingredients that will satisfy your growing kidlets.  Best of all, they are 30 minutes or less. Let’s dig in!

MONDAY

Shrimp Tacos with Cilantro Lime Salsa  |  Green Healthy Cooking

I can’t think of any better way to start off the week than with shrimp!  These tacos are going to have you dancing to the table in anticipation of their fresh flavors.  Lorena has a way with food that has me captivated.  Check out her blog and don’t miss this roasted lamb dish – it’s to die for!

Easy Cacciatore Chicken Breasts  |  Mommyhood’s Diary

I knew I had to share this dish with you the minute I saw it.  I love that it’s only 30 minutes and look at all those yummy ingredients and flavors!  Oriana even gives you a tip on how to remove the aroma of garlic from your fingers!  I just discovered her blog this week and I’ll be visiting often.

One Pot Pasta Primavera  |  Oh My Veggies!

What a delicious celebration of wondrous Spring veggies!  Kare from Kitchen Treaty made this for Oh My Veggies and it’s simple, quick and healthy.  The mad rush for asparagus is starting so make sure you get yours.  It’s only in season for a short time so feast while you can!

THURSDAY

Mexican Meatball Soup  |  Dinner At The Zoo

Sara has created such a gorgeous meal!  I love the fresh flavors and if you don’t have time to make the meatballs, you can buy the pre-packaged ones if you’ve found a good brand.  You have the option of making this dish super spicy or toning it down if you have kids who aren’t so keen on the heat.  You’re going to love the healthy, family-friendly recipes at Dinner At The Zoo.

FRIDAY

Meatball Pizza with Roasted Garlic and Spinach  |  Simply Fresh Dinners

Make a few extra meatballs on Thursday and you’ve got Friday’s dinner all figured out.  This is one of my very favorite pizzas and the roasted garlic truly takes it over the top.  Those bursting little tomatoes are delicious, too!

    ROBYN! Hello! I hope you get my comment here; I am not sure if it will go through!

    It was such a joy to see your comment on my blog post. RObyn, it’s all because of YOU. RAW (and you) have changed my life! Yes, Clara and I had the best time and she found out she is a natural model and I found out that I LOVE to photograph willing people! We have two more sessions lined up with some people who are willing to allow us into their antique-filled homes. This ought to be fun.

    Well my friend, school starts again tomorrow. It was marvelous to be off and just PLAY.
