Oven Roasted Tomatoes with Goat Cheese and Basil

 This is an old recipe that desperately needed new pictures and I finally had the time to do them this week.  I haven’t made these since last summer and I had forgotten how delicious they are.  This was one of my very first recipes and I was shooting with my brand new camera and was so proud of the pics!  Now I can only shake my head and laugh – good thing I didn’t realize how bad they were at the time, lol. (That’s  parmesan you see on them this time, not goat cheese but either one is great)

I seem to always have the problem of too many tomatoes or not enough.  This week I had too many and had to cook some up before they went bad.  I’ve roasted cherry and grape tomatoes but never large ones.  I was tempted by my favourite flavours of tomato, cheese and basil and had just enough of each ingredient to roast
Goat cheese, parmesan or mozzarella will give you terrific flavours.  These would be great as an addition to a BBQ’d meal or with some couscous or freekah.
Oven Roasted Tomatoes - Simply Fresh Dinners
I made a dressing of garlic, lemon juice, olive oil and fresh basil and just drizzled it over the tomatoes when they were done.  The calorie count is low in this meal so you can treat yourself to some garlic bread to soak up the tomato juices.  Roasting is a great way to coax concentrated flavours from less than pristine tomatoes.  The flavours were a taste bud sensation! Oven Roasted Tomatoes with Goat Cheese and Basil

Serves: 2-4 persons
Ingredients
  • 4 large, ripe tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons Balsamic vinegar
  • salt & pepper to taste
  • 4 thin slices goat cheese or grated parmesan
  • 4 large basil leaves
  • Dressing
  • small handful fresh basil
  • 1 garlic clove
  • juice of ½ lemon
  • 2 tablespoons olive oil
Instructions
  1. Preheat oven to 350 F
  2. Halve the tomatoes and place on baking sheet, cut side up. I put tin foil on my sheet and sprayed it with olive oil spray to make clean up easier.
  3. Drizzle the olive oil, Balsamic, salt and pepper over the tomatoes.
  4. Roast for 20-25 minutes until the skins are blistered, top the halves with goat cheese and roast another 5 minutes.
  5. Meanwhile, put the dressing ingredients into your food processor and pulse until the basil is finely chopped.
  6. Remove from the oven and place a basil leaf on each tomato and drizzle with dressing.

    Your photos are gorgeous! I love roasted tomatoes and basil as they really sweeten while in the oven. I have made it with fresh mozzarella but now need to try with goat cheese. Take Care, BAM

    Thanks, Bam! Coming from you that’s high praise indeed. I just acquired a new camera and most days I don’t know what I’m doing, lol, but once in awhile get lucky with one shot out of 100.
    I noticed you and I posted about tomatoes and basil on the same day. I’m completely addicted to those flavours.

    Ohhhh, there is NOTHING like tomatoes and basil, and last night, we feasted on these flavors. I actually baked a chicken breast, then topped it with tomato, basil, grated parmesan, WALNUTS and lots of olive oil. GOod glory.

    I found this link on Real Food Fridays #98 – Natural Foods From Nature, which I only discovered half an hour ago. So glad to find your blog and this recipe, which I hope to try this weekend. I am one who simply cannot get enough of sun-ripened fresh garden tomatoes, even when I have to rely on the Farmer’s Market for them.

    Thankfully, I have plenty of fresh organic basil and tomatoes on hand, even a slab of Parmesan cheese to grate. Woohoo!
