Seafood Veggie Flatbread | simply fresh dinners

We’re in the thick of winter but I find myself occasionally craving fresher, lighter dishes – especially the quick and easy ones.  This yummy recipe is full of the nutrients you need to guard against cold and flu season and it will remind you that Spring is not really that far away.  I’ve included both salmon and crab but you can go with just one if you have picky seafood eaters in the house.  Or if you’re a vegetarian,  skip both. Either way, this will make a great lunch or light dinner meal that packs a punch of flavour.

I have to chuckle looking back on these pics because honestly, I had a difficult time photographing this sandwich.  Food bloggers often complain about recipe fails in that the taste just isn’t what they expected but for me, it’s always a photography fail and I seem to be on a downslide with my images lately!  I’m not sure what the problem is but I just can’t seem to take a pic I’m happy with and I’m always left shaking my head and wondering if something is wrong with my camera, lol.  I’ll figure it out eventually but in the meantime, please bear with me 🙂

The idea for this dish came in the grocery store when I came across these lovely fillets on sale for only $2.99 each.  My salmon had a mix of herbs and spices on it and I would suggest adding a few to yours as well.  You can pick these according to your taste but here are some suggestions if you’re unsure of what to use:

  • garlic, lemon, pepper and dill
  • salt, pepper, thyme, a drizzle of honey
  • garlic, low-sodium soy sauce, ginger, lime
  • brush with olive oil and fresh tarragon

My head is already swimming with fresh ideas for Spring and Summer.  I can’t wait to have all the beautiful, locally grown produce and I’m sure many of you are already planning your gardens.  I’m definitely going to be growing more than tomatoes this year but I think I’ll need some advice on the best veggies to grow that require little maintenance.  Is there such a thing? lol.   Enjoy!

Seafood Veggie Flatbread

Serves: 6
Ingredients
  • 6 multigrain flatbread or Greek pita flatbread
  • 1 tablespoon extra virgin olive oil
  • 2 small (6-8 ounce) salmon fillets
  • 1 lemon
  • small handful of chopped dill
  • 8 ounces cooked crab or imitation crab (optional)
  • 6 ounces Low Fat Greek Yogurt
  • 3 cups spinach, chopped
  • 4 green onions, chopped
  • 6 small radishes, sliced
  • freshly ground pepper
  • 1 cucumber, sliced thinly
  • 1 carrot, cut into matchsticks
Instructions
  1. Heat saucepan with olive oil on medium-high heat.
  2. Sprinkle both sides of salmon with lemon, pepper, garlic dill. Place fillets in pan and cook until bottom side appears golden brown. Flip over carefully and cover with a lid, cooking 4-5 minutes or until salmon is moist and flaky.
  3. Oven method: Preheat oven to 425F, place oven rack in middle. Line baking sheet with foil. Lightly brush salmon with oil and add spices. Bake salmon for 5 minutes per 1/2″ thickness. Check with a fork – salmon is done when it flakes easily or internal temperature is 145F at the thickest part.
  4. Let salmon cool slightly while you prepare veggies. Tear or cut into bite sized pieces.
  5. Mix yogurt and 3 tablespoons chopped dill together then spread on one side of the flatbread.
  6. In a large bowl, combine spinach, onions, carrots, radishes, cucumber, crab and cut up salmon pieces.
  7. Assemble sandwich and enjoy!

    Salmon, crab and veggies enveloped inside a round of flatbread – you are speaking my love language! Intend to stick with the lemon, dill, garlic and pepper but am wanting to try more Asian flavors. Your recipe will be a definite favorite!

    Umm…what are you talking about Robyn?! These pics are gorgeous! I saw it on Instagram and just had to pop over. But I totally get what you’re saying. Our standards are often pretty high, then when things don’t turn out as expected, we ultimately feel like failed. I actually just had one of those myself. I normally don’t even bother posting the recipe when that happens, but this time, I just went with it. You can kinda tell that you’re craving Spring. lol

    Me too, I’m already looking forward to spring and hopefully to get more vegetables that are more flavorful. The bell pepper I purchased lately was tasteless and not great for cooking.
    I love the idea of seafood and veggies. It will definitely make a great one-dish meal for dinner. Healthy and delicious 🙂
