Salmon is known as one of our healthier choices but did you also know it’s super versatile in adapting to all kinds of flavors without losing it’s fabulous taste?

Everybody loves salmon, right?  Well, not exactly!  There are definitely two camps on salmon – lovers and non-lovers.  Most people feel pretty strongly about it either way.  If you’re a lover you’ve landed on the right page because I am a huge fan and I make it at least twice a week.  Here are some of my favourites!

Sometimes you just need a quick and easy weekend breakfast and this salmon bake with peppers, onions and mushrooms is the lazy cook’s dream.   Now that the weather is getting cooler, we all cherish those lazy Saturday mornings where we eat our breakfast in our pajamas and take our time getting started with the day.   The oven does the work for you here with just 5 minutes of a quick veggie saute to get started.

Cedar Plank Salmon with Asian Plum Sauce

Are you a big fan of plum sauce?  I love it but had never made it before.  It just wasn’t one of those things that occurred to me until I had an abundance of plums!  I thought it was time to spice up the  salmon so serrano peppers seemed like a good idea, too.  And wow – a great blast of heat with the juicy fruity flavours – a real winner!

Smoked Salmon, Avocado, Lemon and Dill Linguine

Smoked salmon has all the same health benefits of salmon but it has a pretty hefty dose of sodium so go easy on it.  Combining it with avocado and lemon is the best way to go.

West Coast Paella

With wonderful produce from both Barrie Hill and Nichlolyn Farms, I created this dish just packed full of flavour.  I have to say, this is one of the best dishes I’ve made in a long time and if you’re a fan of seafood, you’re going to love it.  I even added bacon to it – lip smacking good!

Simply Smokin’ Salmon Burger

This recipe for salmon burgers requires only one pound for 4 burgers so it’s a great deal.  There are a fairly large number of ingredients in this recipe but if you cook healthily on a regular basis, you should have most of them in your cupboard and fridge.  My secret ingredient? – smoked salmon!

Papardelle with Salmon and Sugar Snap Peas

I used pappardelle pasta with this and if you substitute another one, please use a broad noodle because the dish really demands it.  There are not a lot of ingredients so I wouldn’t vary far from the recipe.  What I love most is that the flavours are subtle yet the freshness makes it special.

Mediterranean Salmon

I was looking in my fridge deciding on dinner one night and decided I had all the ingredients for a Greek salad and planned on making it as a side dish to a lemon baked salmon.  Then it occurred to me that all these flavours would blend beautifully with fish and why not toss them all together – and that is just what I did.

    Good morning my friend! Salmon is my fish of choice over all the others. When I lived in Boston, we had a bigger selection of salt water fish, but now that we’re by lakes, I still prefer salt water fish and salmon is always a winner! Coupled with pasta or veggies, almost any spice, it’s the best!
