Tuesday Tidbits No.26

Hi everyone – it’s Tuesday Tidbits time!  I missed last week’s Tidbits and I don’t have a good excuse – I just ran out of time!  Things have been very busy lately and I’m excited to be creating new Easter dishes for you that I will begin publishing on Friday.  There are 7 dishes in all and they are full of fresh Spring produce and fresh herbs – my favorite!  That means that Tidbits will take a back seat till the end of March but then it will be back with a bang!

Today I want to introduce you to the amazing recipes of my latest discovery, Tessa, from Natural Comfort Kitchen.  She began her career as a certified public accountant before delving into the world of food and nutrition full time.  I’m very glad she did because when I came across her blog I was so impressed with her super healthy dishes that I knew you had to meet her!

Tessa is a super busy blogger who loves photography, travelling, hosting brunch and dinner parties and practising yoga.  She shares menu ideas for every occasion and I can hardly wait to explore those further!

Let’s check out her gorgeous recipes.  First up is Spiced Eggplant Lentil Stew.  This is chock full of goodness with veggies, fresh herbs topped with  harissa, pesto and tzatziki.

    LMFAO ABOUT THE VENDING MACHINE! However, I never use one, so I think my chances of a shark bite are higher? Although, I never go in the ocean either! I mean… I guess there are land sharks too???

    But I am not going to fret about that, instead I am going to make that eggplant stew!

    Comforting to hear the stats on the vending machines since we just had evidence of a great white shark off the coast here last week!       I remember a few times hearing about great white sharks off the coast of Anacortes, WA, Mindy. I was often there on my boat and wondered if it would be big enough should we cross paths!
