Turkey Veggie Nachos

Today you’re going to find me over at The NY Melrose Family again with a yummy, healthy treat of Turkey Veggie Nachos. I’m thrilled to announce I’m now a regular contributor to Jenny’s blog so you’ll find me there every few weeks with a new recipe.

This dish will be perfect if you’re planning on watching the Oscars this Sunday night because you can double it if you’ve got a crowd.  If it’s just the family, you can enjoy knowing they’re getting their veggies and protein while they think they’re getting away with having just a snack for dinner!

Turkey Veggie Nachos | Simply Fresh Dinners

I’m looking forward to Sunday night’s show and I have to confess it’s mainly because of the fashion.  I haven’t seen any of the movies although I’m going to try to cram in a couple this week.  Are you a big movie fan? Which is your favorite of the contenders?  Do you watch the Oscars for the movies or the fashion?

This is great for the Thanksgiving and Christmas turkey leftovers too.  A delicious snack for your football marathons.  Cheers!

Turkey Veggie Nachos

Ingredients
  • 1 tablespoon extra virgin olive oil
  • 1 lb. extra lean ground turkey
  • 1 clove garlic, crushed
  • ¼ cup spinach, chopped
  • ¼ cup shredded carrots
  • ½ red bell pepper, diced
  • ½ zucchini, diced
  • 3 green onions, chopped
  • 2 tablespoons tomato paste
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • salt and pepper
  • 1 cup of Pecorino Romano or Swiss Cheese, your choice
  • 1 large tomato, diced
  • 1 cup iceberg lettuce, shredded
  • ½ cup low fat sour cream
  • ½ cup fresh cilantro
  • 1 bag of organic, whole wheat tortilla chips
Instructions
  1. Heat a medium non-stick frying pan over medium-high. Add 1 teaspoon oil, then garlic, chili powder, cumin and salt. Stir until fragrant, 30 sec. Add tomato paste, carrots, bell pepper and green onions. Cooking for 5 minutes. Crumble in turkey. Cook, breaking meat up with a fork, until it’s no longer pink, 4 to 5 min. (I used ground turkey breast so there was virtually no fat but you may have to drain off any excess fat at this point. Ask your butcher to grind it up for you.)
  2. Add spinach and zucchini, cook for 2 minutes, remove from heat.
  3. Turn broiler on.
  4. Spread tortillas out on baking sheet. Spoon turkey mixture over, then sprinkle with cheese.
  5. Broil in top third of oven just until cheese melts, 1-2 minutes. min.
  6. Serve topped with lettuce, sour cream, tomato, green onion and cilantro.

    Hi Robyn, I’m glad you enjoyed the patio tour. My home will never be a model home, but I love getting fresh ideas from them. I’ll be sharing my actual home next week and maybe even a recipe. I really like your healthy nacho recipe, YUM! We make Mexican food at our house all of the time, it’s our favorite. The recipe I’m going to share is Mexican inspired.
