We’re into week seven of our healthy weeknight meal plans already! I love hearing about your successes and new organizational skills. Isn’t it surprising how much time and worry it saves us? And don’t forget you can easily change it up with recipes from past weeks if you need to accommodate your family’s preferences.
This week I’ve got a special treat for you on Friday that you’re going to love. Plus you’ll be hugging your slow-cooker with thanks for a great meal and time saver. Let’s go!
Slow Cooker Turkey Breast | Living Lou
Louisa made this beautiful turkey breast in her slow cooker! We all love our turkey for holidays but do we ever think to have it at other times of the year? I wonder why we deny ourselves such a healthy, scrumptious meal. This recipe requires only 10 minutes of prep and stuffing fresh sage beneath the skin is a brilliant idea for fabulous flavors.
Keep the leftovers for Wednesday’s dinner and don’t forget to save the bones for nutritious, homemade turkey broth.
Tuscan Kale, Carrot and Parsnip Soup | Simply Fresh Dinners
Thirty minutes will put this colorful bowl of healthiness on your table and if you have a lot of turkey leftover from Monday, you can toss it in here as well. This has enough ooompphh that it doesn’t need it though. Steaming the kale, basil and chives before adding them at the end gives this soup an element of extra deliciousness.
Turkey Pasta Skillet | An Italian in my Kitchen
This kind of meal is what I crave during the week – comfort food with old world flavors. You can make this recipe your own by adding your favorite veggies or picking up a rotisserie chicken if you don’t have turkey. This requires only 20 minutes of prep so I know that this will make my regular meal rotation.
You can use whole wheat, quinoa pasta or gluten-free pasta for this if you prefer. Don’t you love that there are so many great choices out there?
Baked Tilapia with Quinoa and Garlicky Green Beans | A Family Feast
I was sold on this meal at first sight because of it’s bright colors and interesting textures. I like tilapia but it needs a little extra something and Martha has spiced it up beautifully. This dish has it all and the vegetable topping is something I’m going to incorporate into my recipes. Another meal that requires only 20 minutes of prep time. One Pot Cheesy Taco Skillet | Sweet c’s Designs
Wow – Courtney sure knows how to serve up a delicious Friday dinner. This is low-carb, veggie packed and easy on the budget. Everyone is going to enjoy this fun meal and the low calorie count. From start to finish this meal is on the table in 20 minutes!
