I know when you read this week’s healthy meal plan you’re going to want to send me flowers, thank-you notes, and extravagant gifts but really, no need – it’s my pleasure! Ha! You know my passion for food and you know how I love a quick, flavorful meal full of healthy ingredients and this week’s plan has me so HUNGRY! It’s almost lunch time here and all I’ve got is some cheese and bread in the house and outside is a skating rink after a night of freezing rain. Guess it’s a grilled cheese day.
I’m starting to get a little bit of Spring fever and that means it’s time for some lighter flavors in the food. There’s lots of hearty dishes too this week but I’ve got some blackened salmon tacos that’s going to get your excited about warmer weather! Let’s go!
MONDAY
Roasted Chicken with Allspice and Citrus | The View from Great Island
I am SO excited to try this dish! Sue rocks roasted citrus in her recipes and she loves her pomegranate molasses. Combining the two and roasting this chicken on high heat results in heavenly flavors that takes only 35 minutes in the oven. Gotta have it!
TUESDAY
Blackened Salmon Tacos with Pickled Cabbage Salsa and Mango | Vitamin Sunshine
You just know that the pickled cabbage salsa along with blackened salmon is going to make this taco sing with good flavors! I’m so ready for lighter, fresh flavors and this creative recipe from Michelle is going to nudge you into Spring. Only 32 minutes!
Hearty White Bean Soup with Sausage
The prep time for this soup is only 10 minutes so get it started when you come in the door and let it simmer while you get the kids sorted. Neli used two types of beans in her recipe to create a thick, creamy texture. The addition of sausage will satisfy even the biggest appetite.
Pasta with Goat Cheese and Zucchini | Simply Fresh Dinners
Geraldine and I share a love of speedy, flavorful pasta dishes and when I saw this healthy plate of scrumptious, I knew I had to share it with you. I LOVE adding goat cheese to a pasta dish. It melts into everything and creates that creamy, delightfully tart flavor that sets it apart from other cheeses. Perfection in 25 minutes!
FRIDAY
Healthy Flatbread Pizza | Simply Fresh Dinners
If you’re a fan of sweet and savory dishes then you will love this easy dinner. The sweetness of maple syrup roasted squash and the saltiness of pancetta will satisfy the pickiest of eaters and will still leave you with the good feeling of clean-eating. This easy dish is ready in 30 minutes. That’s quicker than the pizza delivery guy!
