Roasted Corn Salsa

It’s corn season and I’m making the most of it.  Each time I visit the farms, I come away with some freshly picked corn and I get ridiculously excited!  It’s so sweet and delicious and it got me to thinking that it would make a great salsa.  I love any combination of sweet and spicy and this is a snap to create for your summer weekend parties.

I roasted the corn in a cast iron frying pan for about 10 minutes, turning as it cooked.  You can also toss it on your grill but to be honest, I just didn’t want to go outside in this  heatwave we’re having!

Fun Fact:  For every kernel of corn on a cob there is 1 strand of silk!

There are crazy big plants of basil at the farms so I decided to use it instead of cilantro and it’s a natural!  If you’d prefer cilantro though, go for it!

These tortilla chips came from the farm and are made from asparagus.  There are so many healthy alternatives now so we don’t have to ruin our healthy snack with sodium and calorie laden junk food.  I’m making up a healthy substitutions list so if you have some brand names to share, I’d love to hear about them.  That goes for all foods – sauces, chips, pasta, you name it.  I have been working on this list for awhile now so will share it soon!

Roasted Corn Salsa

Serves: 4-6 persons
Roasted corn and jalapenos give you the perfect sweet and spicy snack. Loads of flavor in this easy to make party pleaser.
Ingredients
  • 2 cobs of corn
  • 2 small or 1 large tomatoes, diced
  • 2 green onions, chopped
  • 1/2 yellow or orange pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • ½ cup cilantro or basil, chopped
  • juice of one lime
  • salt and pepper
Instructions
  1. Brush corn lightly in olive oil and season with salt. Heat cast iron fry pan on medium and sauté corn until kernels begin to char. (You can also grill the corn if you prefer) Set aside to cool.
  2. In a medium bowl, combine tomatoes, onions, yellow or orange pepper, jalapeno, cilantro/basil, lime juice, and salt and pepper. . Add sautéed corn and stir to combine.

    Ohhhh, roasted corn? YES….and now is our time here for this golden jewel of a food! OK, you keep my meal plans right up to plan. I think I need to roast some corn soon! HOW ARE YA? It’s been very hot out here too and I haven’t weeded in about a week. But we also had some torrential rains that made going outside impossible!

      Oh my goodness, Anita, I’ve been bogged down with tech problems on my blog as well as my new staging site so please forgive my slow responses and lack of visits on IG! I’ve got way too much on my plate and I can’t seem to say no to anyone, lol. Still hot here but we got your rains today and we sure did need them! The farmers will be happy 🙂

    Good morning darling one! You are having tech problems?OH, that will take up a lot of one’s time! I hope it all gets worked out! Even my blog, I’m having difficulties suddenly with the size of photos and my header, and I can’t figure it out. I’ve change the sizes, etc, to no avail. I’m glad to hear it finally rained for you! We had tons of rain so that helped cool things down. I can’t believe I go to a school meeting this coming Friday. I don’t want to give up my summer yet!       Yes, can you believe the things they can make these days, Cheri. I recently had pasta made from lentils and chickpeas. Those were the only 2 ingredients! Perfect for a pasta addict like me, lol.
