Instead, let’s have a beer and a some tasty snacks. I don’t even drink beer but the pretty label on the bottle caught my eye, ha! We had these yesterday while we watched the Toronto Blue Jays beat the Kansas City Royals 7-1. Yay! This has been a hard fought series for our team and just when it looks like they’re out, they rally back and play a great game. Crossing our fingers for Friday night’s game!
Ok, and on to these tasty, quick and easy gems. Ever since I tried Za’atar in this salad, I’ve wanted to taste it again because I love it’s citrusy, nutty flavor. It adds so much to this tartine that you could easily skip the cheese. This super easy recipe is another dish I found in Vegetarian Times and I didn’t change a thing.
Over the next few months we’ll all be watching lots of sports from our couch so let’s snack on healthy foods rather than putting on those pounds that we’ll regret in February. This is going to satisfy even those hard core chips and dip kind of guys and if healthy is the only option you serve, they’ll soon get used to it, lol.
This simply requires mixing your tomatoes, shallots and arugula with olive oil, lemon juice and Za’atar. Toast your bread with more za’atar and goat cheese and you’ve got yourself a scrumptious treat.

- 10-12 cherry tomatoes, halved or 2 medium tomatoes, finely diced (2 cups)
- 2 cups arugula
- 1 large shallot, minced (1/4 cup)
- 1 tablespoon extra virgin olive oil
- 2 teaspoons freshly squeezed lemon juice
- 6 tablespoons Za’atar, divided. You can buy the spice or make it yourself. Recipe below.
- 1 8 ounce log fresh goat cheese
- 1 loaf whole grain bread, ciabatta or country French bread, cut into 16 slices
- Za’atar
- 3 tablespoons dried thyme
- 2 tablespoons ground sumac
- 2 tablespoons sesame seeds
- 1 tablespoon dried oregano
- 1/2 teaspoon garlic powder
- Combine all ingredients in small bowl. Store in airtight container.
- Preheat oven to broil. Toss tomatoes, arugula, and shallot in large bowl. Add oil, lemon juice and 1 teaspoon of Za’atar; toss to coat. Set aside.
- Spread goat cheese on bread slices, and place on baking sheet. Sprinkle each bread slice with 1 teaspoon of Za’atar. Broil 2 to 3 minutes, or until bread is crisp and Za’atar darkens.
- Place 2 tartins on plate. Top with 1/4 cup tomato-arugula mixture.

October 22, 2015 at 6:29 pmOh Robyn, I think these look absolutely delectable, from your captures to the combination of ingredients! I had never heard of Za’atar until recently. I don’t know if you’ve ever seen the old TV shows of The Two Fat Ladies? teeehee….well, they were a British duo sensation and not only are their recipes interesting, but the English countryside the traveled and their wit and accents make for fun viewing. They made something last week (we watch them off of some internet site) with this combo of spices. Interesting!

I’ll have to see if I can find it again. You would really love this tasty bite and Za’atar is nutty, woodsy and bright – you’ll crave it after tasting it the first time.
