Good news, everyone – I’ve got another Top Ten list for you! I would say the second most popular dish after chicken is pasta and I’m bringing you my very favorite healthy dishes from some super talented blogger friends. Can you believe that these gorgeous dishes can be made in under 30 minutes. I speak the truth. Read on!
Zucchini Noodles with Minced Beef and Mini Heirloom Tomatoes | Dish by Dish
I love this healthy dish that also includes beef for the carnivores in the family. Felicia includes some gluten-free soy sauce to make this dish extra interesting. Top with fresh parsley and everyone will be asking for more.
Crock Pot Leftover Turkey Bolognese | The Endless Meal
You’ll recognize Kristen’s name because she was featured on Tuesday Tidbits. She continues to amaze me with her skill in both the kitchen and with the camera. Take twenty minutes to put this together in the morning and come home to the mouth-watering aromas of a delicious dinner.
Watercress Pesto Pasta with Roasted Parsnips and Peppers | Vitamin Sunshine
Michelle is so creative with her fruit and veggies and this is no exception. You just know that this is going to be super flavorful. She used quinoa pasta in this dish to make it extra healthy.
Pasta with Peas and Kielbasa | Cooktoria
I recently met Tania on Instagram where I was taken with her beautiful photos. This recipe is from her mother and called Pasta e Piselli in Italy. Tania has made a few adjustments and given us a delicious dish that you know the kids are going to gobble up! Warning: take a snack when you visit Tania’s blog because you’ll be there a LONG time! Gorgeousness!
One Pot Wonder Southwest Pasta | The Wholesome Dish
Can you believe all these beautiful ingredients cook up in only 12-15 minutes. Your healthy, vegetarian meal will be on the table in 25 minutes and you’ll be doing the happy dance with so much time to yourself and only one pot to clean up. I love the southwest flavors of this popular dish and you’re going to love Amanda’s other One Pot Wonders as well. They are a huge hit on Pinterest!
One Pan Veggie Fajita Pasta | Baker by Nature
You know that Ashley is a pasta lover because she has beautifully creative dishes on her blog and you’ll want to explore all of them. Here she combined the flavors of fajitas that results in an easy, creamy bowl of deliciousness! Make a double batch because everyone will be lining up for seconds!
Pappardelle with Salmon and Sugar Snap Peas | Simply Fresh Dinners
I made this dish in the summer but it can be made year round and adds a lightness to your weekly menu. The pappardelle noodles made this dish extra tasty. You’ll only require two salmon fillets for this dish so it’s budget-friendly as well. Don’t skimp on the fresh herbs – they make the dish.
Pasta with Mushrooms and Spinach | Green Valley Kitchen
Geraldine is another blogger whom I met recently and I’m completely taken with her beautiful creations. You’re going to love her family friendly recipes and unique use of flavors. I’m sure Geraldine could make a hard boiled egg look fascinating! This dish is easy to prepare and busting with flavor and texture – love the inclusion of walnuts!
Angel Hair Pasta with Olives, Artichokes and Mozzarella | Center Cut Cook
My friend, Maggie, from Omnivore’s Cookbook developed this beautiful recipe for a guest post and I knew I had to taste it right away. I’m a big fan of artichokes and add some fresh basil and lemon juice and you’ve got the perfect dinner. On the table in 15 minutes!
Creamy Tomato Basil Fettuccine | Creme de la Crumb
I have seen Tiffany’s stunning photos on Pinterest and when I visited her blog I knew I had to share this eye-catching dish! She has based this on one of her favorite recipes – Slow Cooker Tomato Basil Parmesan Soup and I can see why it’s such a popular choice. Her whole collection of slow cooker recipes are a must-see. Thanks for sharing your inspirations, Tiffany!

GiGi Eats
January 21, 2016 at 12:15 amNoodles/Spaghetti used to be my ALL TIME FAVORITE FOOD ON THE FACE OF THE PLANET. Now I can swap in spaghetti squash, zucchini, butternut squash, etc – all spiralized, so I still get the “spaghetti” like consistency… But I mean, can you REALLY replace spaghetti/noodles? lol!

January 21, 2016 at 10:56 amHave you tried quinoa pasta , GiGi? It tastes the same yet it’s so much lighter. I love the spiralized noodles, too, but yes – as a child I drooled over spaghetti and meatballs, lol.
