What could possibly be better than a shrimp dinner? An Easy, One-Pot Cioppino dinner with healthy, wild-caught shrimp, scallops and mussels! See what I did there? I’d like to say it’s ‘oh so clever’ but this is actually how I think! Any way that I can find to add as much seafood as possible into a dish is going to make me happy
Oh my gosh, I had so much fun making this dinner of all my favorite ingredients. I was doing the happy dance in the kitchen as I sauteed my peppers, garlic and onions in preparation of this deliciousness. What kind of music do you play when you cook? I go from soft rock to opera to hard rock – it all depends on my mood. This was a hard rock day and called for some Aerosmith to celebrate these flavors.
And best of all, this recipe includes my scallops and seafood from my favorite company, Marina del Rey. Did I ever tell you the story of how I came to partner with this brand? I purchased their Wild Caught Argentinian Shrimp at my local market and was so blown away by the size and flavor that I contacted the company in hopes that I could pass on these gems to my readers.
And now I can tell you about the scallops too! Have you been keeping up with the important facts about the difference between farmed and wild caught seafood products? At one time it was thought that you could eat farmed at least once a month but that is no longer the case. Most experts are suggesting now that you forgot farmed entirely. That means it’s time for some smart shopping. The good news is that you can get both flavor and quality from this amazing brand!

- In shrimp and fish farms, antibiotics, hormones, and color are added to the seafood. Even worse, these shrimps are swimming in man made pools with waste matter, chemicals and bacteria.
- Naturally rich in protein and low in calories seafood is an excellent source of amino acids, which play a key role in the formation of digestive enzymes, hormones and tissues, such as skin and bone.
- Shrimp contain two fatty acids of the omega-3 family, which benefit the cardiovascular system.

I love beautiful seafood dishes over the Christmas holidays and I’ve made this as quick and easy as possible so that you can be out partying with your guests and not tied up in the kitchen. You can be sure that I’ve retained all the best flavors though. I made it 3 times in 3 days just to be sure!

Easy One-Pot Cioppino
An Easy, One-Pot Cioppino dinner with healthy, wild-caught shrimp, scallops and mussels! A classic seafood stew with a little bit of everything. Seasoned with a bay leaf, parsley and basil. Serve with a loaf of warm, crusty bread for sopping up the delicious broth!
- 2 tbsp extra virgin olive oil
- 1 onion, chopped
- 1 small bell pepper, diced
- 3 cloves garlic
- 1 serrano pepper, seeded and diced
- 28 oz can of diced tomatoes
- 2 cups tomato juice
- 2 cups red wine (I used merlot)
- 1 cup clam juice
- 1 cup fish stock
- juice from one lemon
- 1 bay leaf
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- salt and pepper to taste
- 300 grams Marina Del Rey Wild Caught Argentinian Shrimp, thawed (You can use the Easy Peel or the Peeled and Deveined)
- 300 grams Marina Del Rey Wild Caught Icelandic Scallops, thawed
- 1 pound mussels, remove beards and scrub
- handful of fresh parsley to garnish

Heat olive oil on med-high in large pot. Add onion and red bell pepper, saute for 2-3 minutes until onion is soft and translucent.

Add garlic and serrano pepper and saute for one minute.

Add tomatoes, tomato juice, red wine, clam juice, fish stock, lemon juice, bay leaf, parsley and basil. Salt and pepper to taste. Cover and let cook on medium high for 20 minutes. Remove bay leaf.

Add shrimp, and scallops. Cook for 2 minutes covered.

Flip shrimp, and add mussels, cover and cook for 3 minutes. Remove cover and serve. Garnish with fresh parsley and serve with fresh bread to soak up all those delicious juices. Cheers!
This is a quick and easy recipe for cioppino so there are some short cuts but I found that the flavors are intact. I’ve made this many different ways and prepared my own seafood broth and although it has a different flavor than the fish stock/clam juice combo, both are equally delicious.
If you don’t like too much heat in you food, omit the serrano pepper.
I have left the salt and pepper to you to season. I use very little salt in my cooking and buckets of pepper!
