This is quick and easy and will taste as though you’re eating in an expensive restaurant. I love this dish and have made it many times in the past but I had kind of forgotten about it because of the crazy price of halibut. The fish is lean, fine, firm and flaky and sweet and delicate in it’s flavour. If you don’t want to spend the money, haddock is a great alternative and will give you the same delicious results.
The soba noodles are a healthy addition that adds a little something different to the meal. They are made from buckwheat flour and have a strong, nutty flavour. They are high in Vitamins B1 and B2 and provide twice the amount of protein as rice. Despite it’s name, buckwheat doesn’t contain wheat and isn’t even a true grain. It is made from the fruit of a leafy plant in the rhubarb family. So if you buy the pure buckwheat noodles, they are gluten free.
This sauce is simple to make and if you want to keep it as ‘clean’ as possible, use organic orange marmalade. It’s easy to find these days and I found the price to be comparable. This dish contains soy sauce and butter but hey, I can’t keep it 100% clean ALL the time. OK, not true, I guess I could but I love this dish and I’m sticking with it!
The fresh spring onions and toasted sesame seeds really make the dish. I used unsalted, roasted sunflower seeds because that’s what I had on hand.
Best thing about this is if your kids don’t like fish – tell them you’re having spaghetti! Cheers!
I’m sharing this recipe with these fabulous bloggers.
- 4 6 ounce halibut or haddock fillets
- 2/3 cup organic orange marmalade
- 1/2 cup freshly squeezed orange juice
- 1.5 tablespoons low sodium soy sauce
- 1 tablespoon rice vinegar
- 2.5 tablespoons butter
- 3 teaspoons minced ginger
- 3 crushed garlic cloves (I used 4 but I’m a little crazy with the garlic)
- pinch of crushed red pepper flakes
- 8 ounces soba noodles
- 2 green onions, chopped
- handful of toasted sesame seeds
- Preheat oven to 425 F
- Combine marmalade, orange juice, soy sauce, rice vinegar, butter, crushed red pepper flakes, ginger and garlic in a small pot and bring to a boil before turning to low heat to simmer for 20 minutes, stirring frequently.
- Place halibut on baking sheet on foil to help with clean-up. Brush your glaze on your halibut, add salt and pepper and bake for 12 – 15 minutes. Remove from oven.
- Cook soba noodles according to directions while halibut is baking. Drain and rinse well with cold water immediately.
- Place a serving of soba noodles on each plate and top with halibut. Add toasted sesame seeds and green onions on top.
