I have confession to make – this is the first time I have made corn chowder. Ok, I have another confession – I don’t like most of the ingredients in this soup – ha! – but most everyone I know likes them so I decided to find a healthy version because I am assuming lots of readers like it too.
Since I’m a beginner chowder-maker, I decided to look around to find some time tested recipes. I found this one at She Cooks and Bakes! and it was perfect. I used coconut flour instead of all purpose, doubled the bell pepper and celery and skipped the bacon but everything else is the same. I realized too late that I put far too much pepper on it for the photos but hey, that’s me – always with the garlic and pepper!
I really enjoyed browsing through the recipes at She Cooks and Bakes! and I highly recommend you pay a visit. The recipes are kid friendly and great for busy, working parents.
This was very quick and easy to make and I have to admit that I like it quite a bit and it was a hit with everyone. It’s been my experience that corn is usually a sure bet with kids so all you need is a salad and dinner is ready to go. Cheers!

I love clam chowder too so I will have to spend some time putting together a healthy formula. It’s been ages since I’ve had any and I’ve never made it. You will be my test subject, lol.

December 2, 2013 at 6:10 pmI think the addition of the creamed corn makes it nice and thick and slightly sweet with the ham. I have a confession to make I have never made ham and corn chowder either. Have a super week. BAM

December 4, 2013 at 7:37 amLol, it was so easy, Bam, I have no idea why I haven’t made it before this. You’re right about the creamed corn – it was the peaches and cream variety so especially sweet. Thanks so much for visiting.

Thanks for your kind comment. I’m not really a fan of creamy soups or corn and I don’t eat ham so it really was a stretch, lol. I love hooking up with your party though! Have a great week.
