This is one easy and healthy appetizer! I had some of the ingredients leftover from my Spring Salad with Chicken recipe and decided to put together these tasty bites and I was so delighted with the outcome.
It’s just a matter of cutting your grapes and bocconcini cheese in half, slipping a small spinach leaf in between and thread them onto a toothpick.
I drizzled the dressing from the salad over them and the fresh tarragon really made the difference. You can use whatever dressing you like. If you choose to leave them without a dressing that`s ok too but I do think the cheese needs that extra little zing.
For esthetic reasons, I`m glad I had the red globe grapes because they look so much better when cut in half than the oval ones. Did you know that grapes are very high in Vitamin K and B2? They are also thought to play a role in longevity and you can read more about this wonderous little fruit right here.
Bocconcini cheese is fresh mozzarella cheese that comes in small ball serving and is known for it`s mild flavour and smooth, soft texture. One ball has 60 calories, 6 grams of fat and no trans fat. There is 5 grams of protein in each.
I made these when I had unexpected company and didn`t have time to run to the store. They loved them and I will definitely be making them often. Cheers, everyone!
