All these dinners are only 30 minutes so this week will be a breeze. I have four dishes because I’m suggesting you double up on Thursday’s diner so you can kick back and serve leftovers on Friday night. Easy!

I featured this scrumptious salad in my post, Top Ten Main-Course Salads, and you’re going to find this to be the perfect way to start off your week. If you’re cooking a chicken for Sunday dinner, use the leftovers or if you have a big family, toss in another chicken in the oven and you’ll be set for Monday’s dinner as well as some school lunches. (Or go for the easy rotisserie option) Apple, feta, roasted squash, chicken – wow – every bite will be delicious!
Easy Tomato Florentine Soup Recipe | Good Life Eats
Katie calls this a pantry meal and you gotta love those. Just when you’re scratching your head as you look in the fridge you realize you have all the ingredients to this bowl of heaven. Most days you’re going to have everything you need for this and now that you’re a super planner (yes, I know you are!), this will be a snap. This is comfort food at it’s best and you don’t even need a salad because you’re including spinach in the soup. Katie has so many tempting, time saving recipes on her blog – you’re going to love it!
Simply Fresh Salmon | Simply Fresh Dinners
Someone mentioned to me the other day that they love my salmon recipes and that’s when I realized I’ve cooked quite a few salmon dishes for the blog. I can assure you, there is no end in sight for these because there are a million ways to cook this super healthy fish and I love ’em all! Buy a whole frozen side of salmon and it will feed your family of four. It costs about $14-16 in Canada so I’m sure it’s much cheaper in the US. Some quinoa and a green salad will make you the queen of healthy dishes this week!
THURSDAY AND FRIDAY
No frills Turkey Chili | No Gojis No Glory
Who doesn’t love chili? And who doesn’t love a quick and easy chili with tons of flavor? Christine has this delicious recipe that contains turkey so you’re saving on fat and calories as well. You will likely have most of the ingredients in your pantry for this one as well so you should be saving a bundle at the market this week. I’m suggesting a double batch of this so won’t have to cook on Friday.
Every year on our birthday as kids we got to pick our favorite food and mine was always chili. It’s still one of my favorite. What’s yours? Did you get to pick your dinner on your birthday?

January 29, 2016 at 10:51 pmYes, we got to choose dinner on our birthdays. I loved my Mom’s tuna casserole – it has a little bit of tomato sauce in it so it’s different but delicious. She also made me a beautiful pink cherry nut cake every year, until I was about 13 or 14 when I started asking for carrot and potato pudding with warm pudding sauce. Fridays is hit and miss at our house for dinner now days. In summer we might make a pizza on the grill or a quick salad. Winter we always have homemade soup in the freezer.
