Hi everyone, I’m sharing this recipe with The NY Melrose Family today and I have a feeling you’re going to love it. This is so quick and easy (and healthy, of course) that it’s got to go straight into your recipe file!
Spring is here and we all want to spend our daylight hours outside so let’s cook up those recipes that will give us the freedom and not be tied to the kitchen with long prep times.
Whether for just two or a large family, this is pretty easy on the budget so pop over to Jenny’s to get the recipe. Her blog is so much fun and you’ll find lots of recipes, crafts and party planning tips that you’ll enjoy as well.
- 1 pound of mini potatoes, halved
- 2 tablespoons extra virgin olive oil
- 1 teaspoon dried parsley
- 1/4 teaspoon freshly cracked black pepper
- 16 asparagus spears, woody ends cut off, halved
- 3 large handfuls cherry tomatoes
- 4 salmon fillets, about 5-6 oz. each
- 1 lemon, cut into small wedges
- 1.5 tablespoons balsamic vinegar
- small handful of fresh basil leaves
- Preheat oven to 425 F
- Place potatoes in baking dish and drizzle with 1 tablespoon of oil. Sprinkle parsley and season with pepper. Place in oven for 15 minutes or until golden. (larger potatoes will require a longer cooking time)
- Remove from oven and add remaining ingredients except for basil. Nestle the salmon in amongst the vegetable and drizzle tomatoes and asparagus lightly with balsamic vinegar.
- Return to oven for an additional 12 minutes or until salmon is opaque and flaky.
- Remove from oven, squeeze two of the roasted lemon wedges over the salmon if desired. Top with fresh basil leaves and serve.

Garlic and shrimp are a perfect couple and when they are roasted, well, it’s just plain perfection! If you’re shy about cooking shrimp, this will guarantee you a juicy, tender result.

Update (April 13): I just love sharing photos from friends and family when they cook my recipes. Debbie from She Graces Her Home in God’s Beauty wasted no time in making this salmon dish and it looks like I should have consulted her before making mine because it looks fantastic! She switched up lime for lemon and even her husband (no fan of fish!) loved it. She also used sweet potatoes, white potatoes, onion, jalapeno peppers, asparagus, cherry tomatoes, basil and fresh lime juice. Thanks so much, Debbie. This pic and your lovely email made my day!

April 11, 2015 at 1:41 amHi Robyn! I didn’t know that buckwheat wasn’t wheat and is gluten free. I learn so many food facts from you. I like that the halibut gives me an excuse to buy marmalade, lol. Sounds so good and of course as a fellow shrimpaholic, the garlic thyme recipe sounds really great.
I’ve got some social media buttons up FINALLY on my blog, but I still need to attach better links which will open a new tab as you suggested and I totally agree. I think I need to work on those other SM pages and I’m a little confused still about instagram. Thank you for your help and suggestions, I’ve really needed to update this for way too long.

And then those salmon burgers, I never thought about making a patty like that. I will wrap mine in crisp lettuce.
