Healthy Cabbage Salad

I hadn’t planned on doing any more Thanksgiving side dishes for the blog because there are so many fantastic recipes out there at the moment but I had this cabbage salad tucked away and it occurred to me that it would make a nice addition to the table.   Most of us have turkey, stuffing, gravy, potatoes and so many other heavy dishes along with the rich desserts and I think it’s important to include something light, crunchy and refreshing amongst all of that.

There are certain members in the family that always ask the question, “What weird dish is Robyn going to bring this year?” when holidays roll around and this year will be no exception.  Well, I’d hate to disappoint so they’re going to be eating this quirky, little cabbage salad.

I made this one day because I wanted something  cleansing and energizing.  You know I love a little ‘bite’ in my meals so this combination of ingredients seemed to be just perfect.  Now looking at these, you would wonder – what was she thinking?  I have to admit, I wondered the same thing but I persevered and a great salad was born!  I also added apple which you don’t see there and it seemed to tie everything together.  Apple and cabbage together create such a invigorating flavor and next time I’ll add some sesame seeds, too.

Healthy Cabbage Salad | Simply Fresh Dinners

This salad is great raw, with a little lemon juice or with the dressing below.   There are so many cabbage salads on Thanksgiving dinner tables that are drowning in mayo so you must promise me not to do that with this one!  It will ruin all that healthy goodness and the taste as well.  Cheers!

Healthy Cabbage Salad

Serves: 4
Ingredients
  • Salad
  • 1/2 red cabbage, cut into thin strips
  • 3 spring onions, chopped, white part only
  • 1/2 bunch of red grapes, washed
  • 1 apple (I used Granny Smith), chopped. (peel if it’s not organic)
  • 1 cup of pineapple, chopped
  • 1.5 cup cherry or grape tomatoes, halved
  • Dressing
  • 1/4 cup non fat Greek yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon olive oil
  • teaspoon raw honey
  • a pinch of cayenne pepper
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly grated ginger
Instructions
  1. Combine all salad ingredients in a large bowl, mixing well.
  2. Combine all dressing ingredients and mix well.
  3. Serve salad raw or with a splash of lemon juice or drizzle with dressing.

    Good morning Robyn!! You are my food guru, because not only do you serve up tasty looking meals, but you always promote healthy eating. I believe in eating colorful food, and you do too. What a great combo here of antioxidant nutrients mixed together to deliver such a taste explosion! I LOVE CABBAGE and feel like now making a soup laden with it….it is very cold out here and something warm is calling me by name!

    Now that is a colorful salad! Love your bright photos! My mom always said to eat the rainbow to stay healthy well I think you have it covered here.     I think your salad looks wonderful! Yes, I am constantly trying new things and the other day one of my kids said to me, “can’t you just make the stuff that you already know we like?” My husband and I started laughing, because when I get into a rut and make the same things over and over again, I hear the refrain “can’t we have something new?” It’s a no-win some days with teenagers. Everyone likes cabbage here so I think I will have to give this a try!
