It was 38 C (100 F) here yesterday once you factor in the humidity so I decided a cool refreshing drink was in order once happy hour rolled around. Luckily, I had some beautiful raspberries from the farms and this drink came together very easily.
You’ll want a zesty or aromatic white wine like Chenin Blanc, Riesling or Pinot Grigio for this tasty drink. It’s as simple as adding some club soda, ice, raspberries, peaches and mint.
My friend, Susan, saw this on Instagram yesterday and decided to make it with peach wine and sparkling water and had delicious results! Thanks for the tip, Susan.
I thought I’d be clever and make some fancy ice cubes but those didn’t quite work out. I tried freezing some mini rose buds in an ice cube tray but I should have googled it before to get some help. This type of thing falls under the ‘craftsy’ kind of thing and I fail miserably in that category. I figured it out later without googling. Simply put the bud in the tray and fill it up halfway and let it freeze. Once it’s frozen, fill it up the rest of the way. Simple right? Didn’t occur to me at the time! I think it would be very pretty though and I’ll be doing it next time. Just be sure you use edible flowers. Or some raspberries in ice would be great, too.
It just occurred to me that this is a budget-wise drink for larger gatherings. Your wine bottles will go a lot further and you’re finding a sneaky way to get some healthy foods into your friends, too.
Today is going to be another hot one. Time to try that ice cube trick again. Cheers!
Update: I met a wonderful lady on Facebook named Suzanne from Capizzanno Olive Oils and Vinegars who has made a wonderful suggestion for this drink. She added 2-3 tablespoons of Blenheim Apricot and I just know it must have been fabulous! Thanks for the tip, Suzanne!
- 1 bottle of your favourite white wine. Chenin Blanc, Riesling or Pinot Grigio are good choices.
- 1 litre bottle of club soda
- 2 pints of fresh raspberries
- 2 peaches, sliced
- a large handful of mint leaves
- ice
- Optional and most definitely delicious – 2-3 tablespoons Blenheim Apricot (a blend of aged white balsamic with no refined sugars). See notes and links in post.
- I would suggest a 2/1 ratio for the wine and club soda for a nice refreshing drink.
- Mix in pitcher or individual glasses.

Today seems to be a very slow day for Instagram but I did see this yesterday and thought what a great idea this is for the same reasons you indicated! Isn’t this a great summer so far? Looking forward to a chat. LOVE!
