That’s one big honkin’ salad! I got a little carried away when I was making this so be aware that the quantities are for a large group and you’ll need to adjust accordingly. This was truly was delicious!
You might be asking yourself – what kind of crazy ingredients is she putting together now? My answer to that would be that you can go just about anywhere online to find the standard summer salads but don’t you want to change things up a bit now and then? A great salad revitalizes you and inspires you to eat fresh. I promise you that the blend of raspberries and smoked salmon is divine! Throw the bosc pear in there and you’re in heaven.
I’m crushing on a great balsamic vinegar that I purchased a little while ago and I’m drizzling it on everything in sight. This salad is so full of flavours that you only need a very simple dressing so I combined just extra virgin olive oil with balsamic and it worked very well.
The raspberries at Barrie Hill Farms were pure perfection. Raspberries are my very favourite fruit and I was happy to hear that it’s a bumper crop this year and we can expect to be picking them well into the 3rd week of August. I was worried when I got out there that I would just bury my head in a pint and start munching away. Thankfully, I managed to restrain myself!
They had some wonderful pea tendrils at the farm as well and they make such a nice addition on top of a salad. You can also cook these little cuties and I’ll be doing that in a future recipe.

- 1 head lettuce or your choice of greens; washed and torn. Arugula or dandelion greens would do very well with this dish. I used both red lettuce and romaine.
- 1/2 pound smoked salmon
- 2 cups raspberries
- 1 pear, sliced thinly. I used bosc.
- 8-10 bocconcini balls
- 1/4 cup sliced almonds
- Dressing
- 1/4 cup grapeseed oil
- 1 tablespoon balsamic vinegar
- Mix all ingredients together for salad.
- Mix dressing ingredients and drizzle over salad.
