If you are a quinoa lover, I have to insist that you try this recipe! If you’re not a quinoa lover, I also have to insist that you try this recipe because it will change your life!
Ok, that’s a little dramatic but truly, this is a dish that you’re going to love!
I had so much fun creating this dish and the flavors were all I hoped for and more. It takes a little more time than my typical dishes but oh, it’s so worth it! This has all the yumminess of a winter comfort food with roasted peppers, tomatoes, garlic and shrimp. Add some spinach, cheese and fabulous herbs and it’s a winner.
That does not mean this is a high calorie dish and if you want it vegetarian, simply leave out the shrimp. If you want it vegan dish check out this site for a substitute for ricotta cheese and this link for mozzarella cheese. I had purchased all the ingredients to make this a vegan dish but once I added the shrimp, it took a different turn. But I’m definitely going to create some new recipes with the tofu and nutritional yeast I purchased. That will be something new for me so cross your fingers, lol.
The flavors of the roasted veggies and shrimp are just busting out of this dish and you won’t have to feel guilty about your piece being a little bigger because there’s no pasta in it. (No rolling of the eyes! I’m soup addicted and I’m not fighting it anymore!)

I’ve packed the quinoa full of nutritious goodies like spinach, shrimp, garlic, and onion. If you’re a mushroom lover, they’d be great in this. I had them on the counter but somehow overlooked them! The ricotta cheese and a little tomato sauce gives it the moisture it needs without adding an egg.
This recipe could be easily changed up to include your favorite veggies and you could get creative with the seafood as well. Crab or lobster meat would be a delicious addition.

- 3 cups organic tomato sauce
- 2 cups quinoa, cooked (cook in vegetable or chicken stock)
- 2 cups mozzarella cheese, shredded (vegan http://bit.ly/1XCBEr5)
- 6-7 baby bell peppers, sliced (red, yellow or orange)
- 4 cloves of garlic, peeled and sliced
- 1 small onion, cut into quarters
- 1.5 cups of mushrooms, sliced (optional)
- 3 medium sized tomatoes, sliced
- 10-12 medium sized shrimp, peeled and deveined
- 2 cups of fresh spinach, chopped
- 1 cup ricotta cheese (vegan http://bit.ly/1XCBFLx)
- small handful of fresh basil, chopped
- 1 tablespoon fresh oregano, chopped
- 3/4 teaspoon kosher or sea salt
- 1 teaspoon freshly ground black pepper
- Preheat oven to 400 F. Cover baking sheet with tinfoil and spray with olive oil.
- Combine tomatoes, garlic, onion, peppers and mushrooms (if using) in medium sized bowl. Drizzle with olive oil; salt and pepper to taste. Roast for 20 minutes and remove from oven, tossing lightly. Add shrimp and roast for an additional 8-10 minutes until shrimp is pink. Remove and let cool slightly.
- In a large bowl, combine 1/2 cup tomato sauce, quinoa, ricotta cheese, 1 cup of spinach, basil, oregano, salt and pepper. Mix well.
- Chop shrimp and onion once slightly cooled. Add garlic, onion, mushrooms and shrimp to quinoa mixture and stir gently.
- Assemble in medium sized casserole dish in the following layers.
- cup tomato sauce spread over bottom
- Half of the quinoa mixture spread evenly
- One third of the mozzarella cheese
- One half of the remaining spinach
- Half of the roasted peppers, tomatoes and garlic
- Half of the remaining mozzarella cheese
- Quinoa
- Tomato sauce
- Peppers, tomatoes and garlic
- Mozzarella cheese
- Cook for 25-30 minutes at 400 F. Broil for 2-3 minutes at the end if you like your cheese browned.
- Garnish with fresh strips of basil and dig in!
