Sauteed Corn, Bacon and Green Onions

It’s about this time of year when everyone is tired of comfort food and looking for fresh and light.  While we’re waitng for those delicious Spring veggies to arrive you can brighten up some simple frozen corn with this recipe.  The kids will love the addition of bacon!

I went to a butcher shop to purchase just a few slices of applewood smoked bacon for this because I wanted a good quality  to ensure there was not a lot of fat in the pan when I added the corn for a quick saute.  It’s that simple!

You definitely want to go organic and check for GMO labeling when buying corn or any corn-containing products — since aside from having other problems, GMO corn doesn’t contain the same level of beneficial vitamins, minerals and antioxidants. Organic corn is a vitamin C and magnesium rich-food and contains certain B vitamins and potassium. It also supplies a good dose of two antioxidants linked to eye and skin health called zeaxanthin and lutein.  (source)

I found this recipe on Martha Stewart and when I originally decided to do it I was unsure of how it would taste but I gobbled this thing up the minute I finished shooting it!   The addition of a wee bit of crushed red pepper flakes guaranteed that I will be making this again very soon.  Cheers!

Sauteed Corn, Bacon and Green Onions

Print Recipe
Serves: 4 Cooking Time: 15 minutes

Ingredients

  • 4 slices bacon, cut into 1-inch strips I used good quality applewood smoked bacon)
  • 4 cups corn kernels
  • Coarse salt and ground black pepper
  • Pinch of red-pepper flakes
  • 2 to 3 scallions, (green onions) sliced

Instructions

Cook bacon in a large skillet over medium-high heat, turning occasionally, until browned, 4 to 6 minutes.

Add corn kernels; season with salt, pepper, and a pinch of crushed red pepper. Cook, stirring often, until corn is tender, 5 to 8 minutes.

Stir in scallions. Serve immediately.

    Well if this doesn’t look like a winner! This is something you can whip up on those nights you forgot to plan dinner. With just my husband and I home alone these days, we tend to eat on the lighter and easy side.

      I remember last year you were always a few weeks ahead of me with your veggies so no doubt I’ll be jealous again this year when you’re bringing back berries from the farm in May and I have to wait till June and July! We’re so lucky to have fabulous farms nearby though, aren’t we?!

    I don’t think that most foods that are genetically modified the nutrition has been compromised – some more than others. We only buy organic corn which my husband loves and I do believe he would love this dish – so I am going to print it and make it for him. Thanks so much for sharing on Real Food Fridays.
