It’s always fun to create a recipe that turns a classic dish that has too many calories into a healthy, tasty dish. I found this recipe at CleanEating.com and with a few modifications turned it into a delectable delight without the guilt.
This is an easy recipe and takes only 10 minutes of prep time and 20 minutes in the oven.
When you’re shopping for the potatoes, choose the larger ones for a more attractive looking wedge.
Choose parsley or cilantro as your garnish but for beginner cooks, remember that cilantro is quite powerful and you may get an unexpected surprise.
. Best thing of all, it’s baked and not fried and potatoes are a good source of vitamin B6, vitamin C, copper, potassium, manganese, and dietary fiber. You might want to wrap these in foil and do them on the grill as well. Enjoy!
Southwestern Cheddar Steak Fries – Healthy Version

Ingredients
- •
- 1 lb red or Yukon gold potatoes, scrubbed and cut lengthwise into 3/4-inch wedges
- •1 tbsp extra-virgin olive oil
- •2 tsp smoked paprika
- •1/2 tsp ground cumin
- •1/4 tsp sea salt
- •1 oz finely shredded reduced-fat sharp cheddar cheese
- •1/3 cup finely chopped red bell pepper
- •2 tbsp finely chopped cilantro or parsley
Instructions
- Preheat oven to 425°F. Line a large baking sheet with foil. Place potatoes in a large bowl and drizzle evenly with oil and toss lightly, ensuring that they are evenly coated. Add paprika and cumin, carefully tossing. (too much tossing will make them mushy). Place potatoes on baking sheet and arrange them in a single layer. Bake in center of oven for 10 minutes, then flip and stir, and bake for10 minutes or until lightly golden and tender when pierced with a fork. (If your wedges are quite thick, it may require up to 12 -14 minutes)
- Remove from oven. Sprinkle with salt, cheese and pepper. Bake for 2 minutes more or until cheese has melted slightly. Sprinkle with cilantro and serve immediately for peak flavor.
