Yes, it’s more shrimp! Ha! This time I won’t apologize for it because you guys all said it was quite ok to bring on the shrimp recipes. This one developed in a weird sort of way. It was a beautiful sunny day and I thought it would be great for shooting photos but I hadn’t really planned anything. I had some white wine left in the fridge from the night before that needed to be used up so it was time for drunken grapes!
I’m all about lime during the summer months and I ALWAYS have frozen shrimp on hand so this seemed to be a logical combination. The grapes have been exceptionally sweet this summer so I thought it would be fun to mix that flavour with a little spice and wow – I was right! These tasty little bites hit the spot!
This is a very simple dish to prepare. I put the grapes in an airtight container with the wine and let it sit in the fridge for 2 hours but I’m guessing you could marinate them for as long as 24 hours.
For the shrimp, I made a marinade of lime, ginger, garlic, honey, red pepper flakes and freshly ground black pepper. Don’t let it marinate more than 15 minutes. I find that the citrus will start to cook your shrimp and then you’ll have rubber! A quick and simple sauté and then they are ready to combine with the grapes.
This was great fun to make and they will make a tasty appetizer at your next gathering served with a bottle of sparkling white wine. It’s also a healthy snack for kids and if they don’t like the spice, leave out the red pepper flakes and of course, leave out the wine. I hope you’re able to enjoy these in the sunshine before our summer comes to a close and if not, they’ll make a great presentation all year round. Cheers!
- 1 pound of large shrimp, washed,peeled and deveined, tails left on
- 1 tablespoon extra virgin olive oil
- 1 tablespoon lime zest
- 2 tablespoons fresh lime juice
- 1 tablespoon minced ginger
- 1 tablespoon minced garlic
- dash of red pepper flakes
- 1.5 teaspoons honey (raw, if you have it)
- freshly ground black pepper to taste
- 1 bunch of seedless grapes (red or green)
- 1 bottle of light white wine (I used chardonnay)
- Place grapes in airtight container and add enough wine to completely cover. Place lid on and refrigerate for at least 2 hours.
- Combine lime zest, lime juice, ginger, garlic, red pepper flakes, honey and salt and pepper; mixing well. Add shrimp, ensuring to coat well. Let sit for 15 minutes.
- Heat oil on medium high in sauté pan. Add shrimp and cook for no more than 1.5 minutes on each side until pink. Remove from heat.
- Using toothpicks, place each grape in curve of shrimp and secure. Serve warm or chilled.
