In an effort to make your meal prep easier in the new year, I’m creating a Top Ten series of quick and easy breakfasts, dinners and snacks. Let’s start with a Chicken dinner because it’s clearly the top choice for most households. And let’s pick 30 minute chicken dishes to assist on keeping you on track during those busy weeknights. With just a little bit of planning, you can have fresh and healthy meals on your table in no time. And don’t forget, there’s a weekly meal plan every Friday to make things even easier!
Here’s my favorite Top Ten 30 Minute Chicken Dinners. Healthy Deliciousness!
Turkish Style Chicken Skewers | Two Purple Figs
Can you believe this beautiful plate of scrumptiousness is ready in only 22 minutes? It simply MUST go on your table. If anyone ever tells you that healthy eating is too time consuming, expensive and doesn’t taste good – show them THIS picture! I recently discovered that Mahy and I live quite close to one another so when we meet do you think I could ask to go to her house for lunch? hehe
Rustic Chicken Cacciatore | Bam’s Kitchen
If you’re a regular reader here you know I’m a big fan of Bobbi’s cooking and this is one of my very favorites. Your kids will be so well behaved and might even offer to help with the dishes after you serve this pan of bubbling heaven. Now stop licking the screen!
#3.
Mediterranean Chicken Wrap | Hapa Nom Nom
This is especially helpful on those nights when you’re scarfing down dinner and running out to kids’ activities. The meal isn’t heavy if they are participating in sports and it’s only 25 minutes to the table. Kathleen has included some great flavors on the chicken that make this an extra special wrap.
Crockpot Chicken Sausage Spaghetti Sauce | Vitamin Sunshine
Only 15 minutes of prep will create this amazing dish. This is such a special recipe from Michelle’s and I know you’ll love it too. Let the crockpot do the work for you. Don’t you want to dive in?
One Skillet Tuscan Chicken | Delicious Meets Healthy
I love that Neli included cannelini beans in this recipe so there’s loads of protein. She loves her one skillet dinners and has many delicious options on her blog. The Paleo Meatballs in Marinara is killer! I can’t wait to taste this!
Italian Chicken and Stars Soup | The Seasoned Mom
Five minutes of prep time for this bowl of goodness! This is exactly the kind of dish that the kids will ask, “Can I have the big spoon for this?” Pick up a rotisserie chicken on your way home from work and this nutritious meal is on the table in record time. Blair has a beautiful blog full of healthy meal recipes and you’ll be browsing there a long while so take a cup of tea along!
Firecracker Chicken | The View from Great Island
Most of the work with this dish is in the chopping so have the kids help you with this. Sue proves that take out from scratch is always a better choice. If your kids aren’t fans of the heat, you can substitute bell peppers. She even has a link to a site where you can purchase those cute take out boxes. I’ve wanted to make firecracker chicken forever and now that I have this delicious recipe, it’s a go. Thanks, Sue!
Roasted Vegetable Sweet and Sour Chicken with Ginger Dusted Broccoli | Girl and the Kitchen
Wow, isn’t this a fabulous looking dish of scrumptious?! Only 35 minutes for all these flavors and none of the breaded, unhealthy stuff that you get with take-out. Mila had this dish in a restaurant that is committed to healthy eating and knew she had to recreate it at home. I’d say she’s perfected it!
Chicken and Orzo Salad | Hapa Nom Nom
I love all the ingredients in this dish. Fresh basil, tomato, pine nuts – I’m licking my lips just thinking about it! This dinner will be filling but not heavy and you’ll feel good knowing your family is getting their veggies. If you use rotisserie chicken, it’s on the table in 20 minutes but only 10 more minutes if you do it yourself. Make extra for your lunch the next day. Thanks for another great dish, Kathleen!
Roasted Lemon and Rosemary Chicken | Simply Fresh Dinners
You’ve seen this dish here before and it’s one of the most popular on my blog. It takes 40 minutes to prepare but I included it because the oven does most of the work. I’ve had a lot of readers tell me they’ve made this one and thoroughly enjoyed it. The house will have delicious aromas when it’s cooking. Prep is as easy as it gets.
