If you’re a regular reader here, you know I LOVE soup – all soups – beef, chicken, turkey, vegetable, Italian, Chinese, consommes, chilled fruit, seafood, gazpacho….whew! I’m sure you get the picture. Most of all I love fresh ingredients in my soup because that’s what makes it most delicious.
It’s so easy to make homemade soup these days so do yourself a favour and avoid those canned ones. And if you can make your own broth, even better. My friend, Paula, who owns SoupHerb Soups, encouraged me to make large batches of chicken and beef broth and freeze it in smaller containers and I don’t know why I hadn’t done that before. So nutritious and over the top delicious!

I’ve started freezing bags with my leftover veggies and then combining them for soups. You can create the most wonderfully flavored soup that way. This is a very satisfying soup and you’ll want seconds so make a big batch!
Farmer’s Market Minestrone | Simply Fresh Dinners
This soup has it’s name because I made it in the summer but it’s a great year-round soup especially because it has barley. I love barley! I love it’s texture, it’s taste and the fact that when you include it in a soup or stew it turns it into a hearty meal. Green beans are the best, too
Chunky Roasted Curried Carrot and Tomato Soup with Halloumi Croutons
The carrots and tomatoes are roasted in this super delicious soup and the crunchy cheese croutons are awesome! Carrots are such an important veggie to include in your diet and especially for your growing children. If you have to do some convincing, serve a grilled cheese on whole grain bread with it.
Chinese Chicken and Vegetable Soup
This is the first Chinese soup I’ve made and I’m definitely planning on more because the flavors rock! It is very popular on the blog and only contains 294 calories. Ten minutes of prep and ready in 30 minutes. Don’t you just love bok choy? This dish is crunchy and addictive!
