Did you know that Chickapea now has Mac & Cheese?! Yessss! Just when I think I’ve hit the pasta jackpot, they up the stakes – perfect.
I stopped eating boxed mac & cheese long ago but now I can go back but this time it’s guilt-free and extra delicious.
The thing I love most about Mac & Cheese is that you can have it stand alone or add your favorite ingredients. This time I decided to do a take on a tuna melt without the bread – just clean ingredients for your family.
This recipe couldn’t be easier and the flavor will have your family bursting into spontaneous applause at the table – no, really – they will! You can also change this up to make it your own. I used mozzarella cheese on top but you can use swiss, white cheddar, or parmesan.

Tuna Mac and Cheese
Tuna Melt Mac & Cheese using chickpea lentil pasta delivers a healthy version of a long-time family favorite. This nutritious dinner will not only be quick and easy; it’s also perfect for saving those extra food dollars each month.
- 12 ounces Chickapea Mac & Cheese (2 boxes)
- 1 rib celery, diced
- 1 can tuna (I use Wild Planet)
- 2 green onions, chopped
- 2 tomatoes, sliced
- 1/2 cup mozzarella cheese
- fresh parsley, small handful, chopped
- salt and pepper to taste

Preheat oven to 350 F

Combine tuna, green onions and celery in a bowl. Salt and pepper to taste.

Cook Mac & Cheese according to package instructions. Drain and return to pot. Add tuna mixture and stir to combine well.

In a medium sized casserole dish, pour mixture and top with sliced tomatoes and cheese.

Bake for 10 minutes, turning to Broil setting for an additional 3 minutes at the end. Top with parsley if desired and serve.
Bell peppers would be a good addition to this.
I recommend using green onions for the recipe but I didn’t have any at he time so I used sweet onion the first time I made it. Both equally delicious.
Swiss or Parmesan cheese would be a good alternative cheese topping.
