Healthy Weeknight Meal Plan (#19)

Coming up is a long weekend in Canada and wow, are we ever ready for it! People started doing the happy dance on Wednesday because the weather has finally turned warm and we are going to get into our gardens, start grilling and just enjoy the outdoors.

Healthy Weeknight Meal Plan (#19) | Simply Fresh Dinners

This is the second to last meal plan for now but I will have my ebook ready for you in mid-August so that you can start planning for the busy time of year.  I know, I know – you don’t want to hear about school starting up in September when the kids are just about to get out for the summer!  I don’t blame you.  I’ll just hush up and get on with our delicious recipes for the week!

MONDAY

Healthy Weeknight Meal Plan (#19) | Simply Fresh Dinners

Asian Style Grilled and Marinated Flank Steak  |  Girl and The Kitchen

Not only does Mila share a great recipe with us but her post is very informative on cooking steak as well as slicing it.  I had never heard of her method but I’m definitely going to try it.   I’m always setting my smoke alarm off when I cook steak but this way will put an end to that.   Flank steak is easy on the budget and this marinade will have it so tender you’ll wonder why you ever bought any other cut!

TUESDAY

Healthy Weeknight Meal Plan (#19) | Simply Fresh Dinners

Thai Beef Salad  |  Simply Fresh Dinners

Cook a couple extra steaks on Monday night so that you can throw this dinner together quickly on Tuesday. You’re going to love the flavors in this salad and those fancy little ribbons?  Made with a potato peeler!  I am the least artistic person on the planet so if I can do it, you can.   You’ll be amazed and impressed with yourself!

WEDNESDAY

Healthy Weeknight Meal Plan (#19) | Simply Fresh Dinners

Lemon Caper Artichoke Chicken Piccata  |  Two Purple Figs

Mahy has a zesty, easy meal that is ready in 20 minutes.  Lemon and Spring are synonymous to me and anytime I can include it in a meal, I do.  You just know the kids are going to gobble this up.  Serve with salad and brown rice and everyone is asking for seconds.  You’ll love Mahy’s blog. It’s full of family friendly recipes and beautiful, creative photographs!

THURSDAY

Healthy Weeknight Meal Plan (#19) | Simply Fresh Dinners

Maple Mustard Poppyseed Baked Cod (Paleo)  |  Cotter Crunch

Preparation time for this is 5 minutes and bake time is 12 minutes!  You should have all the ingredients on hand and the flavors that Lindsay creates here are super tasty especially for those who need some persuasion when it comes to eating fish.  It’s important to include fish in your diet at least once a week as it is a good source of vitamins and minerals.

FRIDAY

Healthy Weeknight Meal Plan (#19) | Simply Fresh Dinners

Miso-Roasted Tomatoes with Soba Noodles  |  Saving Room for Dessert

This is the perfect Friday night meal.  Toss the tomatoes in the oven to roast while you cook up the noodles and dinner is done!  Tricia has combined some delicious ingredients to create this easy recipe and she tells us that the cold leftovers the next day are delicious!

I’d love to hear from you on these meal plans:

  • Have you found them helpful?
  • Is there something more that you’d like to see included?
  • Would you like the calorie count for each meal?
  • I’m going to include grocery lists in the ebook. Will you find this helpful or would you rather make your own?

Let me know in the comments or send me an email with your opinions.  I LOVE getting your emails – thank you!

Enjoy the weekend and your week of happy, healthy eating. Cheers!

It’s fun putting it together, Sue, and I’m finally using a slow cooker, lol.
Your spicy fruit salsa is amazing and we definitely have twin taste buds. I don’t like mushy in my salsa either! All about the texture 🙂 Enjoy your weekend!

My dear friend, I am also doing the happy dance because it’s Saturday, it’s going to be GORGEOUS out, I am going to do some gardening, next week is finals week, no more school in two more weeks and etc…..

Your meals and the way you’ve organized and planned for your readers is such a great help. When school is out, I want to “play house” and actually cook more and do the things I love. HAPPY SATURDAY!

LOL, Anita, isn’t it funny how we get so excited about the beautiful weather after being in the deep freeze for 6 months? I really need to move to a warmer climate! I’m going to have a very busy summer this year but I will find time to ‘play’ as well! Have a great weekend, friend!

Hello, Fast proteins are not critical for muscle growth and strength. What is the point of spending a lot of money on a taxi to the museum if the excursion has not begun until the rest of the class has gathered? This is very important because really fast proteins (whey protein hydrolysates and free amino acids) cost significantly more than regular proteins and regular meals on your table. In this regard, the qualitative amino acid profile of the protein is much more important, but not the rate of its assimilation. In other words, if you decide to buy a can of the coveted protein, then it is better to buy two cans of whey than one can of hydrolyzate or a can of amino acids. 🙂
