Easter Menus

Here are some more suggestions for side dishes and main dishes for this Easter weekend. Each year I have always tried to pick as many make-ahead dishes as possible to allow myself time with the family. Ask your guests to bring a salad or vegetable dish – I’m sure they’ll be happy to contribute and it makes the holiday fun for you as well.

Have you ever thought of seafood for Easter?  It’s a nice change and if you serve both a white fish and a darker fish (like salmon) you can hopefully appeal to all tastes.  You might just have to toss a small prime rib on the BBQ for those who insist on their meat, though!
This dish is a crowd pleaser and will disappear quickly.  Side dishes such as roasted and sliced beets or a cool lentil or orzo pasta salad are perfect accompaniments for this meal.
Wow! Have you ever seen anything like this?  This blogger loves to mix wild plants with her fruits and veggies in her salad and this is truly memorable.  She mixes dandelions, ivy, sorrel and ivy leaves just to name a few.  Be sure you have someone knowledgeable about plants if you are out gathering these in the wild.  Fabulous!

This dish is from myrecipes.com.  Everyone loves carrots and I am always looking to cook them in a new way.  I like the looks of this recipe but I would cut the sugar content in half.  Beautiful presentation, don’t you think?
Cooking Light finds a way to make a scrumptious potato side dish while still keeping the calories down.  This is easy to make and will appeal to all tastes.

      Me too, Bobbi! The addition of the flowers makes such a big difference in the eye appeal, doesn’t it?
