Healthy Popcorn Snacks

Lemony Kale Popcorn | Simply Fresh Dinners

With the colder months here, we’re spending more time inside and on the couch with the TV on.  I have to confess that I love spending a free Saturday afternoon watching a movie with the fire roaring while the snow swirls around outside.   And what goes best with movies?  Popcorn, of course! If you`re a fan of kale chips, you`ll love this Lemony Kale Popcorn.   The kale and lemon add just the right bite to make this a perfect, healthy snack.  And if you have a big group, roast some extra kale and serve chips alongside.  They are super easy to make and if you love potato chips, this will help you make the switch.  Their crunchy goodness is addictive!

Healthy Popcorn Trail Mix | Simply Fresh Dinners This trail mix was so yummy!  Of course I had to do a taste test to make sure I’m bring you delicious recipes – ok – maybe a little more than a taste test.  Yes, I ate that whole bowl!  With each handful you get a different mix of flavours – the sweetness of the mango, the crunch of walnuts,  and the addition of coconut flakes really takes it over the top.  I added cinnamon on top as well but some of you may decide to skip that step. If you can find it, organic popcorn is best.  Did you know that a 3 cup serving of air-popped popcorn has a mere 93 calories and a whopping 3 grams of dietary fibre!   You can munch away guilt free while watching your favorite movies.  Cheers!

We love popcorn. I have never had kale chips, so I don’t know how it tastes. You are one adventurous woman Robyn. I would love the second popcorn mixture. I hope your week is going well. Take care of yourself. Lots of hugs and love from W.W.

LEMON KALE POPCORN??? Omg this would NOT sell to my 15 year younger self, that’s for sure. I don’t even think I knew what kale was back then, LOL! However, if I could eat popcorn now… I’d be ALL over it!

I love pop corn! In fact, that was my lunch today. 🙂 I never thought of adding all those goodies, but why not?
You amaze me with your healthy goodness.
It has been snowing here all day, light and fluffy, just beautiful! I have been sitting by the fire most of the day doing sit down jobs. This week has been a little less crazy for me, so enjoying some free time to get some of my things accomplished.
With the holidays just around the corner and the snow falling, my mind is busy with all that I plan to do to make it festive here in the home.

I trust your week has been blessed?
    Love to you, Debbie

Wow, I love these popcorn flavor combinations. I was just thinking about how much time is being logging in front of the tv because of the cold. Healthy low-cal snacks are always welcomed. I want to make the kale one just to taste 😀 It looks delicious!

    Good morning dearest Robyn!

Now you are talking about my all-time favorite snack here, and I can eat several large bowls of popcorn! Both versions here sound amazing, especially with the kale. You’re right; this is the season to settle in and EAT and why not opt for something healthy. LOVELY idea! Happy Thursday, Anita

I want to have a lazy day watching movies just so that I can try all of these fun popcorn ideas. I think they are both great combinations but loving that kale and lemon popcorn. I am sure I could polish off a bowl of this in no time. In Hong Kong, if you go the movie theater they usually have caramel popcorn or kettle corn. For some reason they seem to like it sweet vs salty. So I bet your healthy popcorn trail mix would be a hit in Asia. Just shared and your photos are awesome!!!

Love both of these ideas! Not sure which to choose first. Maybe the second one. I love mango and it just sounds so good with popcorn and coconut. I’m getting hungry thinking about it! Love your recipes, Robyn. And your photos are always amazing. Have a wonderful weekend and stay warm. 🙂

Hi Robyn, I love popcorn! I make it all the time. I use organic and pop it in extra virgin olive oil. I like to use a lot of olive oil, so that it coats the popcorn and mimics melted butter. I sprinkle Splenda and sea salt on top. I haven’t tried making kale chips yet, but I’m going to now and I’m going to make both of your popcorn recipes, can’t wait! Thanks for the inspiration. And I’ll be featuring them for sure. How was your trip to California?

I’ve had lemon popcorn before but I never would have thought of putting kale in my popcorn! Such a creative idea! It makes so much sense though since people are snacking on kale chips. It’s like chips and popcorn in one snack!
