Look for some sales on tomatoes this week because we’re including lots of them in this delicious plan. So many wonderfully, distinct flavors with these dishes that are sure to please even the pickiest eater. Speaking of picky eaters, if you’ve got one in your family, Jenny at The Melrose Family has a great post on tips to meal plan for them. We need all the help we can get, right?

MONDAY
Asian Shrimp Edamame Stir-Fry | A Cedar Spoon
I’m guessing everyone in your family likes shrimp so starting off the week with this easy, nutritious meal. Julia suggests that if you even want to save more time you can prep the sauce and veggies ahead of time. I would do this on Sunday night so dinner would be a breeze. If you don’t have time the meal still comes together in 20 minutes – what more can you ask for? Love it!
TUESDAY
Quick Roast Tandoori Chicken | Two Purple Figs
Can you believe this amazing dish is ready in 45 minutes, start to finish? When I saw this pop up on Mahy’s blog this week, I was all over it. It’s easy to adjust the spices in the recipe if you’ve got some eaters adverse to heat. Mahy shows you how to butterfly a chicken but you can also ask your butcher to do it for you. (What would I do without him? lol. He saves me SO much time!) There are so many scrumptious flavors in this chicken and then to top it off there is a fabulous sauce. Perfection!
WEDNESDAY
Bacon Chicken and Arugula Sandwich | Jo Cooks
Use your leftover chicken to make these healthy sandwiches tonight. If the family gobbled it all up last night then grab a rotisserie chicken on the way home. A little bacon, tomato, arugula and cheese is going to give you a super sandwich. Jo uses flat bread or naan for these yummy munchies – great idea!
THURSDAY
4 Ingredient Baked Fish with Tomato and Basil Sauce | The Seasoned Mom
Four ingredients, one dish and ten minutes of prep – what? Yep, that’s all it takes and your dinner is on the table in 25 minutes. Blair is a pro at creating very flavorful, family friendly dishes that are going to make your life easier. Either cod or halibut works for this. A healthy green garden salad is all you need with it. Beautiful!
FRIDAY
Loaded Vegan Nachos | It Doesn’t Taste Like Chicken
Friday night is the perfect time for this treat that is full of healthy ingredients and flavours. Sam gives us a great recipe for vegan cheese but you can also use regular cheese if you’re in a hurry. Doesn’t this look delicious! More proof that it doesn’t have to be junk food to taste delicious. Train your taste buds to love what’s good for you!
