We’re up to Week 16 already! That’s four months of healthy plans to keep you on track and make your life easier. I must apologize for missing last week. I had some hacker issues going on with the blog that demanded my time so I didn’t make my deadline! No worries though because when my 30 Day Meal Plan book comes out in September, you’ll have everything you need. I can’t wait to share new and easy recipes with you!
In the meantime, I’ve got a week full of tantalizing international flavors for you!
We’ve got loads of veggies in this week’s menus and there’s healthy proteins along with them to keep those growing kids satisfied. And of course, all the meals are quick and easy!
MONDAY
Healthy Tex Mex Black Bean Burrito Bake | Cotter Crunch
Lindsay sums it up best with her description of her amazing dish.

TUESDAY
Crockpot Honey Harissa Chicken with Chickpeas, Feta and Jeweled Pomegranate Rice
To look at this recipe, you’d never guess that it’s a quick and easy weeknight dinner but it only requires 10 minutes of prep before it goes into the slow cooker! Tieghan is a food genius, in my opinion. That may sound a little over the top to you but when you visit her blog, you’ll agree. Her ability to combine and create new flavors is so fun to watch and I’m always looking forward to her next post on Instagram.
WEDNESDAY
Tomato and Sourdough Soup | Simply Fresh Dinners
This simple soup has a depth of flavor that will surprise you. I’m also running a Vitamix Giveaway on this page so you won’t want to miss it. This comes together in 30 minutes and the delicate taste will have everyone asking for seconds.
Healthy Chicken Caesar Salad Wraps | Simply Fresh Dinners for Outdoor Families Magazine
I created this recipe for Outdoor Families Magazine and it’s the perfect accompaniment to the soup. Make some extra chicken on Tuesday night and you can use the leftovers for this yummy wrap. Easy Peasy!
THURSDAY
Peppercorn Steak with Maple Roasted Carrots and Golden Beets | Simply Fresh Dinners
You are going to LOVE the diverse flavors in this delicious salad. The peppercorn, the maple syrup and the roasted beets topped with goat cheese creates fun, bold teasers for your taste buds. It’s deliciously healthy and will satisfy the most voracious appetite!
FRIDAY
Mini Tuna Pizza | Ominivore’s Cookbook
Maggie has created some delicious snacks for a fun Friday night dinner. You can accompany these with the scrumptious salad and dressing below and you’ve got a fun, full meal. End of the week meals seem to be casual and ‘grab as you go’ so this works well for everyone. You’ll have most of the ingredients in your pantry.
I love the way Maggie describes this yummy dish….
