Can you believe that this week of healthy meals is even quicker and easier than last week? We’re into Week #17 and I’m having so much fun sharing fresh and delicious meals from my talented blogger friends. I’m loving your emails and hearing about the benefits you are discovering from the planning process. We’re going to be experts on this in no time!
Just a little note. I will be publishing 3 more weeks of meal plans. I realize that the summer months are more spontaneous when it comes to dinner time so there may not be as much planning involved. With all those wonderfully fresh local fruits and veggies available you’re going to want to take advantage. I hope to have my Ebook ready for the end of August so I’ll be just on time to help you with back to school planning. In the meantime, let’s eat!
MONDAY
Fish with Blood Orange and Thyme in Parchment | The View from Great Island
This super healthy dish takes only 20 minutes in the oven and you can cook it alone or with your favorite veggies and grains. Sue has a wealth of citrus and protein recipes on her blog and I always look to her site for inspiration when I’ve got a craving for oranges or lemons. The kids will love the tempting colors on their plate!
TUESDAY
One Dish Garlic and Herb Pork Tenderloin | The Seasoned Mom
Ten minutes of prep and this beautiful dish is into the oven freeing you up to get the kids organized with homework or just take a deep breath after a long day. It seems that people are putting pork on their table a lot more these days and there are so many healthy ways to cook it. Thanks, Blair for a beautiful recipe that works for a weekday or a special Sunday night dinner!
WEDNESDAY
Burrito Bowls with Heirloom Bean Veggie Burgers | A Cedar Spoon
This healthy, vegetarian bowl of perfection is on your table in 30 minutes and will satisfy even the hungriest carnivore in your family. The trick to introducing your family to meatless meals is to have enough ingredients on the plate that they won’t even notice that the meat is missing. The coconut lime rice is a wonderful addition to this nutritious dinner.
THURSDAY
Pasta with Asparagus and Sun-Dried Tomatoes | Green Valley Kitchen
Geraldine is my go-to blogger for quick and easy skillet meals and this last week she made the perfect Spring dinner. Loads of flavor but little time and effort required. Be sure to do all your prep first because it comes together quickly. Love the addition of the lemon dressing – a natural with these ingredients. Buy your local asparagus and celebrate the farmers and their hard work!
FRIDAY
Healthy Turkey Meatball Subs | Simply Fresh Dinners
You can make these meatballs on Thursday night to save time. This will be a fun Friday night dinner for the family and much healthier than take out. You’re going to love the slaw I prepared for these. So fresh, flavorful and crunchy!
