Roasted Veggie Pizza

I love roasted vegetables and I love pizza too so this seemed like a perfect combination while still remaining a healthy meal.  You can use most any of your favourite vegetables for this so don’t be afraid to experiment.
I roasted most of the vegetables ahead of time except for the tomatoes and then arranged them on the flatbread with some fontina cheese and back into the oven and voila – yummy, nutritious pizza!

You can use mozzarella or ricotta cheese if you want something different.  I also added some fresh thyme and mint before serving and it bumped up the flavours even more.
This takes the same amount of time it does to order a pizza without all the grease and the kids won’t even know it’s good for them!
Roasted Veggie Pizza

Ingredients
  • I used:
  • baby eggplant, cut crosswise, into 1 inch thick slices
  • zucchini, cut crosswise, into 1 inch thick slices
  • yellow and red peppers, seeded and sliced thinly
  • mushrooms, sliced
  • red onions, sliced thinly
  • garlic, peeled, sliced each clove into 3
  • cherry tomatoes, sliced
  • fontina cheese
  • fresh mint
  • fresh thyme
  • olive oil
  • freshly ground pepper
Instructions
  1. Put all veggies except tomatoes into a bowl and drizzle with olive oil and freshly ground pepper.
  2. Cover a baking sheet with tinfoil and spread out evenly; bake at 500 F for 13 minutes.
  3. Remove roasted veggies and arrange on flatbread, adding sliced tomatoes and your choice of cheese. Return to oven for 10 minutes at 500 F.
  4. Remove and garnish with fresh mint and thyme.
  5. Note: If you like, you can brush the pizza crust with olive oil and sprinkle with basil and oregano before putting toppings on. My cousin, Jane, wrote to me and said she used pesto on the crust – yumm!

    I personally don’t like pizza but I would try and probably like this veggie pizza. Looks delicious and has so many of my favorite veggies on it.

      I’m so glad you like it, Susan. I don’t care for traditional pizza either – too gooey and greasy but this was yummy.
