I know I’m overdoing it on the roasted veggies these days but I couldn’t resist these cherry tomatoes when I found them on sale. Buying tomatoes in the winter is always a dicey proposition in Canada because they are travelling a long way and even the organic ones tend to be rather tasteless. What better way to remedy that than by tossing them in the oven for a little bit in this super simple recipe.
I found this recipe at eatwell101 and, except for cutting the sugar in half, I followed it exactly and was rewarded with some tasty tomatoes that are perfect with pasta, on sandwiches, bruschetta or crackers. Eatwell101 suggests trying it with an omelette and I think that would be fantastic.
This recipe is as simple as cutting the tomatoes in half and drizzling with olive oil, a titch of sugar, salt and pepper and thyme. Into the oven for 90 minutes and done!
Simply put your tomatoes in a jar, cover with oil and seal tightly. They will last up to a week in the fridge. I loved these little morsels and was happy to find yet another way to cook tomatoes. Roasting brings out the rich flavours in tomatoes and the time is worthwhile. Click here for the recipe.
Hope your week is off to a good start. Cheers!

January 20, 2014 at 10:53 pmI checked both links and they both directly go to the recipe. Not sure why you’re having a problem. If you’re searching it on the site – search ‘candied tomatoes’. Let me know if you continue to have a problem 🙂

January 25, 2014 at 10:49 pmThese look great, unfortunately the cost of tomatoes goes up in the winter so I will save this recipe until I start my summer garden.

January 26, 2014 at 1:32 pmI just saw on the news that we’ll be paying even more soon because of the bad weather in the south this winter. I’ll definitely be growing more in my garden this summer. Hope you’re having a fun weekend, Antoinette!

January 27, 2014 at 3:22 pmHi Robyn! I’m stopping in from Let’s Get Real today. These tomatoes are really beautiful. I can think of so many uses for them. You say to store them you cover them with oil. Do you plan to use the oil also or would this be a throw-away? Just curious. New ideas get me thinking!

January 27, 2014 at 6:23 pmHi Christine,
I’m not sure how long these keep but I didn’t keep mine for more than a week. The oil is fabulous and the flavours and scents are amazing especially if you add some other herbs and garlic. I wouldn’t hesitate to use the oil in other things but I just don’t know how long it lasts. Probably a good question for the folks over at eatwell101.com. Glad you liked them.

January 29, 2014 at 12:47 pmThese are beautiful! Great photos 🙂 I don’t even like tomatoes. 🙂 Actually, I love sun-dried tomatoes, or even roasted ones. I’m just not fan of them raw. Thanks for this great idea and for linking it up with Let’s Get Real!

November 10, 2014 at 9:31 amI love this recipe Robyn! As a kid, I used to hate tomatoes. I’m still not a fan of raw tomato slices but I’ve become a huge fan of cooked tomatoes. I would love to spread this on a crostini!! Or put it on top of anything I make this fall!
