Tom’s  Big Easy Sweet Potato Fries

Ingredients

2 whole and natural sweet potatoes=  4 servings

Cajun spice , low sodium or BBQ spice, your choice

EVVO

Optional: fresh shredded cheese parmesan, cheddar or your favorite

Kid Friendly note:   Substitute Cajun spice with light sea salt or cinnamon

Directions
Preheat oven to 400 degrees

Scrub the sweet potato skins, include the skins in this recipe for more nutrients.

Slice the potatoes into 1/4 inch slices  or cut them into French fry size  sticks.

Place on a baking sheet that has been sprayed with an EVVO mister.   Look for the EVVO mister at your local kitchen section or try the olive oil sprayers at the grocery store ( they  may be unnatural..:<).

Very lightly spritz the cut sweet potatoes with EVVO

Sprinkle with your favorite Cajun spice,  (like Emeril’s)  or just salt and light pepper for the kids.

Bake @ 400 degrees on baking sheet for 

Total time:  40 minutes.

 Flip over after 20 minutes.  Bake to your desired crispiness.

2 servings per sweet potato. 

Optional:   to make it different: at the last 10 min add shredded fresh cheese, our favorite.

Yummm!  These are a definite crowd pleaser and  kids really love em.
