I’m having fun creating these collections to make your recipe search easier and today I have a beautiful array of main-course salads.   It’s important to get lots of fresh veggies in your diet and sometimes that’s difficult especially in the colder months where we tend to eat heavier foods.

I love this salad because Jenn gives us a ton of options with both ingredients and dressings.  You can add chicken, beef, salmon, shrimp or have the vegetarian version.  A perfect way to satisfy the picky eaters in your family.  Love the color and crunch in this healthy dish!

Mahy is one of those bloggers who inspire me every time I visit her site.  Salmon and asparagus are such a natural together and the addition of grapes, sweet potatoes,  hard boiled eggs and spinach just makes my head spin with the happy thought of every delicious bite.   Best of all, she tops it off with a sweet mustard dill sauce.  A stunning creation!

This one will have to wait until the watermelon is in but you could skip it if you want to try it now.   The blueberries and strawberries aren’t local right now but they’re pretty darn delicious.  It’s important to sneak in the fruits and veggies when you can and when they see chicken in this salad, they’ll start digging in!

This is my very favorite salad recipe.  If you’re not a meat-eater, skip the steak and you’l still have a plate full of deliciousness.  The maple syrup on the veggies add a delicious sweetness that you’ll want to taste over and over again.  Ok, I’m off to get some steak now because I’m hungry!

A delicious salad that includes every color and flavor under the rainbow.  Sommer loves to top cool, crisp veggies with a hot protein and I couldn’t agree more.  If we want to keep our healthy eating interesting, we’ve got to add those kind of components that make it special.  The family will be doing the happy dance when this goes on the table!

This salad is such a pretty dish and if you want to add more, I would toss in some chicken.  I made those zucchini ribbons with a regular carrot peeler – super simple.  The dressing is such a good accompaniment for this recipe and brings out the best in the healthy ingredients.

    Hi Robyn, such a great array of beautiful salads, your so right about winter and veggies. In AZ it does not stay cold for long so we do not have as much problem with eating veggies but I can only imagine if we were in a lot colder conditions I might be eating a lot more carbs.

    GOOD MORNING! My goodness, how fun it must be to plan all of this, photo-style and shoot, share it and then maybe even eat some of it! Dearest Robyn, these main course salads are such a great way to get so many nutrients, flavors and textures all in one bite. I love these sorts of salads and may even do one tonight. One of my favorites is just spinach, chicken, walnuts and apple. YOU’VE given me some ideas!
