tuesday header3Happy Tuesday, everyone!  I hope your week is off to a good start.  Today we have Healthy Chicken Recipes for SummerBetter Homes and Gardens has a wonderful slide show with some great recipes for everyone’s favourite.  Chicken is a healthy choice but sometimes we ruin it by including ingredients and side dishes that add far too many unwanted calories.  I loved the suggestions they have and they’re all – yes, I’m going to say it – quick and easy!

Other dishes include Cilantro Lime Pasta Salad, Thai Chicken Satay and Grilled Pineapple, Tortellini and Garden Vegetable Bake, and much more.  I love that so many of the big websites now include healthy, fresh and easy dishes.  Three years ago when I started my blog, it was a long and arduous search for these types of recipes.  We’ve come a long way, baby!

KALE CHIPS

My nephews, John and Manny, who are 11 and 9 years of age respectively, made these kale chips yesterday and took some pics to share.  I had been asking John for some inspirational recipes and this is a great suggestion. He has a real knack for cooking at such a young age and has a very developed palate.  He seems to know just what spice will complete a dish and I’m always surprised how easily it comes to him.  They are both wonderfully, healthy eaters and I love it that they prefer these to potato chips.  Great job, guys!

Grease the baking sheet with olive oil
Tear the kale
Spread the kale on the baking sheet
Drizzle them with olive oil
Sprinkle coarse sea salt on them
Bake at 375 for ten minutes
Stirring two to three times making sure they bake in a single layer

    Good morning Robyn! I know now what I’m doing with that extra kale left in the bag – we’ve been using it to make drinks in the blender (kale, banana, frozen blueberries and water) but there’s just enough left to do something else: KALE CHIPS! Easy as can be!

    I love your site my friend. You always give us an unexpected morsel, a tidbit to “chew on” and walk away amazed or chuckling! And….Mr. Paul Newman was always one of my favorites!

      Every time I watch an old movie with Paul Newman I am so taken with his eyes! Wow – so handsome.

    Robyn, what a perfectly delicious, healthy treat. You are just too creative! Great topic about eyes. Paul Newman had always had the most beautiful sexy eyes. I would be swooning too, along with you.
    It’s really cooler here today…refreshing change from the heat. I really enjoyed your beach photos and it would be heavenly to visit Switzerland and stay at the hotel.     The kale chips will be so good and healthy – we always enjoy a chicken meal.

    What beautiful places to swim! I have been wanting to try kale chips. I have some in the garden that is about halfway to maturity. I also noticed that something is eating on a few of the leaves so I have to find out who the culprit is and how to get rid of them! I also love kale in salads and had it in a Freekeh for lunch today (which was very good and I would love a recipe for something similar, hint-hint..) And Paul Newman – best blue eyes ever : )

        Yay! I think it had a Greek spin on it – spicy and sweet with golden raisins, sunflower seeds, orange juice, cooked kale, something spicy. It was served cold like a salad but something similar warm sounds good too. Can’t wait to see what you find : )

    Good Morning Robyn! How fun that you are in the kitchen with your nephews. I bet they love it and love their Aunt very much. Love Kale chips and yours look especially delicious and crunchy. I had no idea that coconuts could be the death of you. Oh my goodness, in the land of tropics, I better start to look up more and see what is coming my way. Yikes. I would love to be outside more and especially in Switzerland overlooking the mountains. Gorgeous views. This week the sky in Hong Kong is a thick as pea soup from all the pollution from China and the typhoons. Today I will enjoy the aircon… Have a super week.       They are super special little men, Bobbi, and I love every moment I spend with them. I actually played run and duck with some coconuts in a hurricane when I was in Hawaii. It felt like bombs hitting the ground around me, lol.

      They are amazing little people, Cheri, and I feel so fortunate to spend time with them especially at this age when their schedules keep them so busy. Their mom taught them this dish and they are big fans of her healthy cooking.

    Robyn, I’m an Aquarius as well and I loooove being in the water…which is another reason we’ll never be able to settle in NYC. After looking at all those swimming spots, I suddenly want to get back out there and do some serious traveling…and I wouldn’t mind starting with that Hotel in Switzerland. On another note, cows seriously have best friends?? Now I’ll most definitely never go back to eating them 🙁
