Tuesday’s Tidbits

Last week I finally had some spare moments to do one of my favourite things, spend a little down time browsing through my favourite food photo sites- yummy!  Occasionally I’ve been lucky enough to have my photos chosen by them but I think just by the skin of my teeth, lol.  Looking at the gorgeous food pics on these sites really motivates me to try new things and get more creative with my photography.  Now, if my camera would just do what I tell it to do!  McKel1Q7B3236-e1373882852333

So last week’s browsing led to an  amazing discovery – McKel from Nutrition Stripped.  I found her beautiful site on Food Gawker so I wasn’t really wasting time and drooling – I was doing research for my readers!  McKel is a registered Dietitian and Health & Wellness coach who approaches nutrition from a whole-food outlook.  I love that she is all about delivering the right information and providing the truth about what is right for a healthy body.  McKel is passionate about  ‘Integrative and Functional Medicine nutrition research, sports nutrition, lifestyles from vegan/vegetarian to paleo, digestion efficiency, and food allergies/sensitivities’ – just to name a few.

Great photography is another one of McKel`s skills and this dish really caught my eye – and my appetite.  In this Spring Veggie Tacos with Avocado Cream dish, she has created a healthy, plant-based dish that will please everyone – even the hungry carnivores!   McKeluntitled-23-of-36

I am so excited about the avocado cream.  What a great addition to these healthy tacos and you just know that the flavours are out of this world.

You must visit this site because not only will you find great recipes but important information on nutrition as well.  I know that I will be a regular visitor as I move towards a completely plant based diet.  McKel is all about making ‘healthy eating deliciously simple’ – one of the most critical decisions you make every day, right?

How`s extensive is your vocabulary?.  For years now I have been getting an email each day from Webster`s Dictionary with a new word.  Initially, I would open this each morning with excitement but I will confess in the last few years, I trash it more often than read it.  Here is another reminder that a good vocabulary is a great thing to possess.  The website lists Important Infrequently Used Words to Know.  I really enjoyed going through this list although it was a bit disconcerting to discover how many I didn`t know!  I`d love to hear what you think.

 Here`s a place called Jacob`s Well in Wimberley, Texas.  It is a perennial spring that flows from a deep underwater cave – looks a little scary from up here but I`m guessing this is a whole lot of fun for both kids and adults alike!

Have you ever heard of the book, Tippi of Africa?  It`s about a young girl growing up with her French photographer parents in Africa and her adventures with animals.  I tried to buy this book last Christmas for my nephew but it`s impossible to get a copy and there is no word on when it will be reprinted.  Some rare bookstores wanted up to $600 for it.  At that price, I think I can find the patience to wait for the next printing!

In the meantime, here is one of the many sites you can visit to learn more about Tippi and see some beautiful photos.  She is grown now and living and married in France.  An amazing story.

    Good morning Robyn! WOW, you have served up some delicious ideas today, and more than just culinary. That avocado cream sounds amazing, and i seem to remember seeing a recipe lately for brownies, using avocado as a base instead of butter. IMAGINE THAT?

    Once school is out (this Friday!) I so want to concentrate on trying my photography again, and trying to get good photos with better lighting. Other people always inspire, and you do me.

    Oh my word, the photo of the kids jumping into that Spring gave me butterflies just looking at it! What an awesome place to swim!

    The story of Tippi sounds delightful, but I am with you, I think I shall wait for a lower price on the book. I have always loved Africa and had a heart for the people there. When I was 18 I had the blessed opportunity of traveling there and it was life-changing!

    The food, as always, makes my mouth water. I used to add guacamole powder to my avocado’s, but found it would give me a terrible headache so I started using fresh and dried herbs and what a difference – tastier and no more headache!

    What a great post Robyn, love Nutrition Stripped, the recipes look wonderful. How funny I used to get the daily word from Dictionary but not longer read it. The picture of Tippi and the big cat is amazing, licking her like she’s part of the family, I would go to pieces if it was one of my kids. Lol.

    Oh, Tippi and her cat are amazing, as is Jacobs well – wow! The avocado cream sounds amazing. I love recipes for meatless tacos and have gotten my husband to eat lentil tacos stating they would be okay to have “once in a while” haha. I found that I can freeze the lentil mixture and prepare a batch of beef tacos for him and lentil for me and we are both happy : ) Anxious to check out the word list and see how I do…

    Good Morning Robyn and I know this is good evening for you in your part of the world. Thanks so much for introducing us to McKel’s website so many delicious ways to do clean eating. I love her photos and her style as she likes to shoot her photos from straight above and that is a very different perspective. Tuesday tidbits is always so refreshing to read as you are always sharing such fun and interesting information. Brilliant idea to have one new word sent to you each day.     Elephants are one of my favorite animals. I am always so amazed by their beauty. I was thinking about making some fish tacos (never made them, never had them) and then found this recipe. Hmmmmmm….decisions, decisions. Like the idea of a fresh taco like this.
