Hi everyone, I hope your week is off to a good start. First off, I have a dish that will blow your mind!. It’s been a long time since I’ve been this excited about a recipe but Amy Lee Scott at Club Narwhal has created a Thai Chicken Satay Salad that will tease the taste buds of even the pickiest of eaters.
Ha! Told ya! Amy has created a delicious blend of ingredients that makes this dish a real star. Isn’t that the best looking salad ever? I’m going to be making it this week and I know it will become a favourite for sure. Check it out here.

This next tidbit made me laugh so hard.
I am not known for my grace and I’m constantly stumbling and crashing so this had me howling. I felt ok laughing about it because the girl was very good natured about it. Having fallen in the mud myself (with a brand new camera in hand!), I have the utmost empathy, lol.

In the Spring, one of my favourite things to do has always been to drive to the country to the different horse farms to see the new foals. I love horses, they are such a beautiful animal – although I’ve had some hairy riding experiences – told you, as graceful as a clown!. The sweet little colts are such a joy to watch as they learn to cope with their long legs.

This is the Skaftatell Ice Cave in Iceland. I think I would feel kind of claustrophobic in here but I’d be willing to give it a try. Other wordly.

Meagan, a blogger at Sunshine and Sippy Cups has put together a list of 30 sites that take food photo submissions. She gives a brief description of each as well. I finally submitted a photo to Food Gawker two weeks ago and when it was accepted I felt like I won the lotto! They have tough submission guidelines but there are a ton of sites out there that are a little less stringent.
One of the nicest and most blogger friendly photo sites is Food Foto Gallery. They have a ton of traffic and you’ll notice an immediate change in your stats. C J Ludlow runs the show over there and she’s great. She promotes your pics on Twitter and Google+ and she doesn’t give you heck when you screw up your submission. (I do this on a regular basis, lol, the screwing up, I mean).
