Ok, I can’t help myself – just ONE more shrimp recipe and then I promise to switch to something else for awhile. In all fairness, I did cook a fabulous salmon with fresh blueberry sauce but I took the pics outside and wasn’t paying attention to the camera settings and they are all horribly overexposed! Photo Fail! (although I have to chuckle because I’m looking at the pic above and it looks like a silhouette of the loch ness monster – ha!)
Well, the flavours on this dish are definitely not a fail and for summer freshness, I definitely recommend giving this a try. I made this when I had some leftover apricots from my Blackened Chicken recipe. I love salsas and I love changing them up with juicy fruits and this is the season to do it. The addition of lime juice, fresh parsley and cilantro made it such a nice compliment to the ginger shrimp.
As you know, I like to add lots of garlic but you can cut back on that if your partner isn’t a garlic lover, lol. The honey and red wine vinegar balance each other out and add a little variation as well.
There is a lot of tomato in the recipe as well and did you know that this yummy fruit is one of the world`s healthiest foods. If you eat an apple and a tomato each day, you are on a good start to taking care of your body. Tomatoes reduce risk of heart disease, support bone health, contain anti-cancer oxidants, and reduce risk of neurological diseases such as Alzheimer`s disease.
This is quick and easy to make and you will surprise and delight your friends with a different kind of salsa. Good way to introduce the kids to apricots as well.
What`s your favourite fresh dish this summer? Do you have one that you make often for summer parties?
- 2 tablespoons extra virgin olive oil
- 1 pound medium shrimp, peeled and deveined
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- freshly ground pepper
- 3 cups fresh, chopped apricots
- 1 1/2 cups fresh, chopped tomatoes
- 1/2 cup diced scallions
- 1 clove of garlic, crushed
- 1/4 cup fresh lime juice
- handful of fresh, chopped cilantro and/or parsley
- 1 teaspoon raw honey
- 1/2 teaspoon red wine vinegar
- 1/4 teaspoon salt
- SALSA
- Mix together apricots, tomatoes, scallions, garlic, lime juice, cilantro, honey, red wine vinegar and salt. Combine carefully so that fruit doesn’t break down. Can be made a couple of hours ahead of time to let flavours meld.
- Rinse shrimp under cold water and dry. Mix together garlic, ginger and pepper with shrimp and let sit for 15 minutes.
- Heat large sauté pan with 2 tablespoons of extra virgin olive oil to high heat. Add shrimp and cook 1 minute – 1 1/2 minute per side. (I find one minute on high heat cooks it perfectly)
- Add shrimp to salsa, garnish with more cilantro and serve.

Food porn! I want to dig my fork right into that photo but I don’t want to mess up your photo. Tell me about photo bloopers… Just today with so many new buttons and gadgets on my new camera I managed to accidentally set the timer function and turn off the touch screen functionality.
