So, are we all thawed out finally?  I hope wherever you are that you’ve been experiencing some warmer weather and sunshine.  Although I’m guessing it’s just starting to get colder down under in Australia and I know some cities in Saudi Arabia are experiencing wicked sandstorms so I’m going to be thankful for what we’ve got here.

Let’s start off the day with some more healthy and beautiful Spring recipes from my blogger friends and then we’ll see where it takes us.  I’ve got a real mishmash of things to share with you and these kind of posts usually end up being the most fun!

Shrimp Spring Rolls with Peanut Sauce | Healthy Nibbles and Bits

You know Lisa from Healthy Nibbles and Bits because I featured her not long ago and when I saw this recipe, I knew I had to share it with you.  Shrimp Spring Rolls with Peanut Sauce is Lisa’s homage to her time in Thailand and you can see her passion for tropical flavours.  I’m seriously obsessing over this dish and won’t rest until I make it.  I love the peanut sauce and pickled vegetables with my favs, shrimp and strawberries.

These are not difficult to make and imagine how you would impress your guests with these!  A cold glass of chardonnay, the backyard deck and these scrumptious treats and you’re guaranteed a good time.  Thanks, Lisa!

Poached Egg, Lardon and Arugula Salad with Creole Mustard Vinaigrette | Healthy Recipe Ecstasy

And I pinched another recipe from Michelle at Healthy Recipe Ecstasy that is perfect for weekend brunches.  Poached Egg, Lardon and Arugula Salad with Creole Mustard Vinaigrette is simply mouth-watering.  I love the combination of arugula and egg and the vinaigrette is what makes this extra special.

I love Michelle’s recipes because she thinks outside of the box and never fails to come up with something unique that is always very appealing and makes you want to dive in.  Despite what we’ve been told in the past, eggs are good for you and you can eat them up to 4 times a week – yolks included.  Thanks so much, Michelle!

With the farmer’s markets opening  and all the beautiful Spring recipes to make, you’ll want to choose the very best veggies. To help you do that, here’s a site with a great InfoGraphic that you can print out and put on your fridge to remind you exactly what to look for.   Are you as excited as I am for Spring to be here?  I’ve been doing the happy dance all day long!

You know I love Architectural Digest and while I was browsing some properties, I came across this gorgeous patio in Naples, Italy and it has me captivated.  I love that this is unique and cozy yet has a bit of an exotic feel to it as well.

And this office!!  It’s on the masculine side yet if someone offered to put it into my house, you can be sure I wouldn’t object! You would just need to get rid of that naked iron guy on the credenza, lol.  You sure would feel  creative in a place like this if you could stop admiring it and inviting over all your friends to love it, too!  What do you think?  Is this something you would add to your home?

By the way … I do see you guys reading the little tidbits on healthy info and I’m so glad about it!  The more we can educate ourselves and our children about healthy eating, the better off we’ll be.  There’s so much to learn and I’m always reading and trying to sort out the real stuff from the junk so I can pass it on.  By no means am I an expert but I do have a passion to get to the truth about what we’re eating so thanks for taking the time to click on the links!

Speaking of healthy eating, one of my favourite people made a recent recipe of mine and shared a picture. It absolutely made my day!  Debbie from She Graces Her Home in God’s Beauty  created a wonderful Quick and Easy Baked Salmon Dinner.  Isn’t this a beautiful image?  I’m going to encourage Debbie to add some recipes to her blog because not only is she a great cook but she has a real knack for food styling, too!

She switched up lemon with lime and even her husband (no fan of fish!) loved it.  She also used  sweet potatoes, white potatoes, onion, jalapeno peppers, asparagus, cherry tomatoes, basil and fresh lime juice.  I’m definitely going to try the lime next time – love this!

Poets, philosophers, historians and scientists have all tried to define ‘love’, but there doesn’t seem to be a standard definition for it.  I think the folks in this video summed it up perfectly.  I’d love to know if you agree.  Cheers!

    AMEN AND AMEN! Yes, love is inexhaustible. We can talk about it, study it, make poetry about it, make movies about it, and it will never get dull. We are made from love, by love, to love, to create it wherever we go from beginning to END.

    You always share the most significant ideas framed by our basic need to eat and be nourished. You have a winner here on your blog dear friend: you bring it all to the table in friendship, light and love. (gotta try those wraps with STRAWBERRIES!)

    Happy Tuesday Robyn! Love Lisa’s Shrimp and strawberry rice wraps with the sauce. I would have never have thought to put that combination together but so see how lovely it comes together and shrimp too so I know you would love it. I love the simple black and white kitchen with a splash of yellow. So classic and fun!

    Thank you for featuring my/your salmon dish,am have to say, it was one of the best ways I’ve cooked salmon. The flavor was amazing!! I didn’t have fresh herbs, but will certainly use fresh next time.

    I’m not one for shrimp, but that recipe with strawberries looked interesting, who knows, I may just give it a try.
